Tips for success
For the best chocolate curls, use a bar that is slightly chilled but not rock-hard. Grate it on the large holes of a box grater, using light pressure.
If the curls start to melt or stick together, place the bowl in the freezer for a few minutes. You can also use a vegetable peeler to make wider curls.
To make the layers even more distinct, chill the glasses in the freezer for 10 minutes before assembling. This helps the smoothie stay cold and the layers set a bit. If you want a more intense raspberry flavor, add a teaspoon of raspberry jam to the mashed berries.
Variations
- Berry Swap: Replace the raspberries with sliced strawberries or a mixed berry blend. Use the same method to create the red layer. The flavor will be equally bright and fruity.
- Tropical Twist: Add a small banana to the blender with the mango and passion fruit for extra creaminess and natural sweetness. Garnish with toasted coconut flakes instead of chocolate curls.
- Green Layer: Blend a handful of fresh spinach or kale into the mango mixture for a green layer beneath the golden smoothie. The color contrast becomes a vibrant sunrise of red, green, and gold.
- Spiced Version: Add a pinch of ground turmeric or a tiny pinch of cayenne to the blender for a warm, golden hue and a subtle kick. The spices complement the tropical flavors beautifully.
Storage and make-ahead
- Fridge
- Store leftover smoothie in an airtight container in the fridge for up to 24 hours. Stir before drinking.
- Freezer
- Freeze the smoothie in a sealed container for up to 1 month; thaw in the fridge and shake well.
- Reheat
- Do not reheat; serve cold. If frozen, let it thaw in the refrigerator and stir well.
This smoothie is best enjoyed immediately, as the layers will start to blend after a short time. If you have leftovers, you can store them in the refrigerator for up to 24 hours, but the texture will change.
Give it a stir before drinking, and add a little extra coconut milk if it has thickened too much.
You can prepare the mango cubes and raspberry mash a day ahead and keep them in the refrigerator.
The chocolate curls can also be made in advance and stored in an airtight container in the fridge. Assemble the smoothie just before serving for the best texture and appearance.
Serving ideas
Serve this smoothie as a show-stopping breakfast or brunch drink. It’s also wonderful as a dessert or a special afternoon treat. The layers make it perfect for a celebration, and it’s sure to impress guests. Pair it with a light pastry or a fruit salad for a complete meal.
For a more indulgent version, add a scoop of vanilla ice cream or a drizzle of honey.
You can also rim the glass with toasted coconut or crushed freeze-dried raspberries for extra color and crunch. The smoothie is best served cold, so keep the glasses chilled until ready to serve.

Raspberry Mango Sunrise Layered Smoothie with Chocolate Curls

Ingredients
- 2 cups ripe golden mango, peeled and cubed
- 1/2 cup passion fruit pulp (fresh or frozen)
- 1 cup full-fat coconut milk
- 1 cup crushed ice
- 1 cup fresh raspberries, plus more for garnish
- 2 oz mango white chocolate bar
- 1/2 cup coconut whipped cream
- 1 tbsp passion fruit seeds
Instructions
- Slice the golden mango cheeks away from the pit, then dice the flesh into cubes. Place the cubes in a bowl. Rinse the raspberries under cold water and pat them dry with a paper towel. Grate the mango white chocolate bar on the large holes of a box grater, collecting the curls in a small bowl.
- In a small bowl, lightly mash half of the raspberries with a fork until they release their juice but still have some texture. Set aside. This will be used for the red layer at the bottom of the glass.
- Add the mango cubes, passion fruit pulp, coconut milk, and crushed ice to a blender pitcher. Secure the lid and blend on high until completely smooth and thick, about 30 to 45 seconds. Stop and scrape down the sides if needed.
- Divide the mashed raspberries between two tall glasses, spreading them evenly over the bottom. Then pour the mango passion fruit smoothie over the back of a spoon onto the raspberry layer to create a distinct golden layer on top. The raspberry layer will remain at the bottom, creating a sunrise gradient.
- Top each glass with a generous dollop of coconut whipped cream. Scatter fresh raspberries and passion fruit seeds over the cream, then finish with a shower of golden chocolate curls. Serve immediately while the smoothie is cold and the layers are still distinct.
