Before you start
Before starting, make sure the mango is ripe and cubed, the raspberries are washed and dried, and the chocolate is chilled for easier grating. Have all ingredients measured and ready.
If using fresh passion fruit, cut it in half and scoop out the pulp with a spoon. If using coconut whipped cream, make sure it’s chilled and fluffy. A tall, clear glass will best show off the layers.
Ingredients at a glance (8)
- 2 cups ripe golden mango, peeled and cubed
- 1/2 cup passion fruit pulp (fresh or frozen)
- 1 cup full-fat coconut milk
- 1 cup crushed ice
- 1 cup fresh raspberries, plus more for garnish
- 2 oz mango white chocolate bar
- 1/2 cup coconut whipped cream
- 1 tbsp passion fruit seeds
Instructions
Prep the Fruit and Chocolate
- Prep the fruit and chocolateSlice the golden mango cheeks away from the pit, then dice the flesh into cubes. Place the cubes in a bowl. Rinse the raspberries under cold water and pat them dry with a paper towel. Grate the mango white chocolate bar on the large holes of a box grater, collecting the curls in a small bowl.Look for You should have neat mango cubes, clean dry raspberries, and a pile of golden chocolate curls.Tip Chill the chocolate bar for 10 minutes before grating to get cleaner curls.
- Muddle the raspberriesIn a small bowl, lightly mash half of the raspberries with a fork until they release their juice but still have some texture. Set aside. This will be used for the red layer at the bottom of the glass.Look for The raspberries should be broken down but not completely smooth.Tip Use a fork or a potato masher for quick work.
At the end of this phase, you should have neatly cubed mango, clean and dry raspberries, and a small bowl of golden chocolate curls. The raspberries are lightly mashed and set aside. Everything is ready to go into the blender.
Blend and Layer
- Blend the mango smoothie baseAdd the mango cubes, passion fruit pulp, coconut milk, and crushed ice to a blender pitcher. Secure the lid and blend on high until completely smooth and thick, about 30 to 45 seconds. Stop and scrape down the sides if needed.Look for The mixture should be thick, creamy, and a bright golden yellow with no visible chunks.Tip If the smoothie is too thick, add a splash of coconut milk or water, one tablespoon at a time.
- Layer the smoothieDivide the mashed raspberries between two tall glasses, spreading them evenly over the bottom. Then pour the mango passion fruit smoothie over the back of a spoon onto the raspberry layer to create a distinct golden layer on top. The raspberry layer will remain at the bottom, creating a sunrise gradient.Look for The two layers should be visible and distinct, with the golden smoothie sitting on top of the red raspberry layer.Tip Pour slowly and gently to avoid disturbing the layers.
The smoothie base is thick, golden, and creamy. When poured over the raspberry layer, it creates a distinct two-tone effect. The texture should be smooth and pourable but not runny. The layers should hold their shape for at least a few minutes.
Garnish and Serve
- Garnish and serveTop each glass with a generous dollop of coconut whipped cream. Scatter fresh raspberries and passion fruit seeds over the cream, then finish with a shower of golden chocolate curls. Serve immediately while the smoothie is cold and the layers are still distinct.Look for The glass should show a red base, a golden middle, and a white cream top with bright fruit and chocolate curls.Tip Use a long spoon to enjoy the layers as you drink.
Each glass is topped with a cloud of coconut cream, fresh raspberries, passion fruit seeds, and chocolate curls.
The presentation is vibrant and inviting. Serve immediately to enjoy the cold, creamy texture and the visual contrast of the layers.
Common mistakes
One common mistake is over-blending, which can make the smoothie too thin and watery. Blend just until smooth, about 30 seconds.
Another is pouring the smoothie too quickly, which can mix the layers together—pour slowly over the back of a spoon. Also, avoid using unripe mangoes, as they will be tart and fibrous.
How to tell it’s done
The smoothie is done when it is thick, creamy, and completely smooth, with no ice crystals or chunks of mango.
The layers should be distinct when poured, and the garnish should be fresh and vibrant. Serve immediately for the best texture and visual appeal.
