Tips for success
For the best texture, measure your flour correctly. Spoon it into the measuring cup and level with a knife, rather than scooping, which can pack in too much flour and make the muffins dry. Use room-temperature eggs and milk to help the batter emulsify smoothly.
If you want extra-tall muffins, let the batter rest for 15 minutes before filling the cups; this allows the baking powder to activate and creates a higher rise. You can also sprinkle a little granulated sugar over the streusel before baking for an extra crunchy top.
To keep the raspberries from sinking, toss them in a tablespoon of flour before folding into the batter. This helps them stay suspended. If you prefer a more uniform chocolate distribution, chop the chocolate chips into smaller pieces.
For a more intense chocolate flavor, use dark chocolate with at least 60% cocoa. If you want a citrus twist, add a teaspoon of lemon zest to the batter. These muffins are versatile and can be adapted with other berries, such as blueberries or chopped strawberries, or with nuts like pecans or walnuts.
Variations
- Blueberry Lemon: Replace the raspberries with 1 1/2 cups fresh or frozen blueberries and add 1 tablespoon of lemon zest to the batter. The lemon brightens the flavor and complements the blueberries beautifully.
- White Chocolate Cranberry: Swap the semisweet chocolate chips for white chocolate chips and use dried cranberries instead of raspberries. The tart cranberries balance the sweet white chocolate for a festive twist.
- Double Chocolate: Add 1/4 cup unsweetened cocoa powder to the dry ingredients and increase the milk to 1 1/4 cups. Use dark chocolate chunks and skip the raspberries for a rich, chocolatey muffin.
- Nutty Banana: Mash 1 ripe banana and fold it into the batter along with the raspberries. Add 1/2 cup chopped walnuts or pecans for extra crunch. Reduce the milk to 3/4 cup to account for the banana's moisture.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 1 week. Warm before serving for best texture.
- Freezer
- Freeze in a single layer, then transfer to a zip-top bag for up to 3 months. Thaw at room temperature or reheat in the microwave.
- Reheat
- Warm in the microwave for 15–20 seconds or in a 350°F (175°C) oven for 5–7 minutes to restore the crisp topping.
Store the muffins in an airtight container at room temperature for up to 3 days. To keep the streusel crunchy, place a paper towel in the container to absorb excess moisture. If the muffins are stored in the refrigerator, they will last up to a week, but the streusel may soften.
Bring them to room temperature or warm them briefly in the microwave before serving to revive the texture. For longer storage, freeze the muffins in a single layer, then transfer to a zip-top bag for up to 3 months.
You can prepare the streusel up to 3 days ahead and keep it in the refrigerator. The muffin batter can be made in advance and stored in the refrigerator for up to 24 hours, but note that the baking powder will lose some potency, so the muffins may not rise as high.
For best results, bake the muffins fresh. You can also freeze the unbaked muffin batter in the muffin tin, then bake from frozen, adding a few extra minutes to the baking time. Alternatively, bake the muffins fully, cool them, and freeze them for up to 3 months.
Serving ideas
These muffins are delicious served warm, when the chocolate is still melted and the raspberries are juicy. Pair them with a cup of coffee or tea for a cozy breakfast or snack. They also work wonderfully as a dessert, especially with a scoop of vanilla ice cream or a dollop of whipped cream. For a brunch spread, arrange them on a platter dusted with powdered sugar. The combination of tart fruit and sweet chocolate makes them a crowd-pleaser for all ages.
If serving at room temperature, let them cool completely on a wire rack to prevent condensation from making the tops soggy. For a special touch, warm them in the oven for 5 minutes before serving. You can also slice them in half and toast them lightly, then spread with butter. The muffins are versatile enough to be enjoyed on their own or as part of a larger meal. They also make great lunchbox treats or on-the-go snacks.

Raspberry Chocolate Chip Muffins with Streusel Topping

Ingredients
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 cup whole milk
- 2 tbsp thick Turkish yogurt
- 2 1/4 cups all-purpose flour (2 cups plus 2 tbsp)
- 10 g baking powder (1 packet)
- 5 g vanilla sugar (1 packet)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 1/2 cups fresh or frozen raspberries
- 1 cup semisweet chocolate chips
- 1 tbsp cold unsalted butter
- 1 tbsp granulated sugar
- 1/2 cup all-purpose flour
Instructions
- Heat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners. In a large bowl, whisk together the melted butter and granulated sugar until combined. Add the eggs one at a time, whisking well after each addition. Whisk in the whole milk and yogurt until the mixture is smooth and slightly thickened.
- In a separate bowl, whisk together the all-purpose flour, baking powder, vanilla sugar, salt, and baking soda. Add the dry ingredients to the wet mixture and fold with a rubber spatula until just combined. Do not overmix.
- Gently fold the raspberries and chocolate chips into the batter. If using frozen raspberries, do not thaw them first; add them straight from the freezer to prevent bleeding.
- In a small bowl, rub the cold butter, granulated sugar, and all-purpose flour together with your fingertips until the mixture forms coarse crumbs. Set aside.
- Scoop the batter into the prepared muffin cups, filling each about three-quarters full. Sprinkle the streusel evenly over the tops, pressing lightly so it adheres. Scatter a few extra chocolate chips on top if desired.
- Bake the muffins in the preheated oven for 20–25 minutes, until the tops are golden and a toothpick inserted into the center comes out with only a few moist crumbs. The internal temperature of the muffins should reach 200°F (93°C) if measured.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack. Serve warm or at room temperature. Pull one open to reveal the moist crumb and melted chocolate.
