Before you start

Before starting, heat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners. Measure all ingredients accurately, especially the flour, which should be spooned into the measuring cup and leveled. If using frozen raspberries, keep them in the freezer until ready to fold in.

Have the melted butter slightly cooled but still liquid. Set out the eggs and milk so they come to room temperature, which helps the batter emulsify smoothly. Prepare the streusel ingredients and keep the butter cold. Gather a large mixing bowl, a whisk, a rubber spatula, and a small bowl for the streusel.

Instructions

Batter and Streusel

  1. Make the Batter
Heat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners. In a large bowl, whisk together the melted butter and granulated sugar until combined. Add the eggs one at a time, whisking well after each addition. Whisk in the whole milk and yogurt until the mixture is smooth and slightly thickened.
Look for The mixture looks pale and ribbony when the whisk is lifted.
Tip Use room-temperature eggs and milk for a smoother batter.
  2. Add Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking powder, vanilla sugar, salt, and baking soda. Add the dry ingredients to the wet mixture and fold with a rubber spatula until just combined. Do not overmix.
Look for The batter is thick and slightly lumpy, with no dry streaks.
Tip Overmixing develops gluten and makes muffins tough.
  3. Fold in Berries and Chocolate
Gently fold the raspberries and chocolate chips into the batter. If using frozen raspberries, do not thaw them first; add them straight from the freezer to prevent bleeding.
Look for The berries and chips are evenly distributed without crushing the berries.
Tip Toss frozen berries in a little flour before folding to keep them suspended.

At the end of this phase, you have a smooth, thick batter studded with raspberries and chocolate chips, and a bowl of crumbly streusel. The batter should be pale and ribbony, with a slight sheen from the butter.

The streusel should hold together when squeezed but break apart easily. The muffin cups are filled and topped with the streusel, looking inviting and ready for the oven.

Baking

  1. Make the Streusel
In a small bowl, rub the cold butter, granulated sugar, and all-purpose flour together with your fingertips until the mixture forms coarse crumbs. Set aside.
Look for The streusel looks like coarse sand with pea-sized clumps.
Tip Use cold butter straight from the fridge for a crumbly texture.
  2. Fill the Muffin Cups
Scoop the batter into the prepared muffin cups, filling each about three-quarters full. Sprinkle the streusel evenly over the tops, pressing lightly so it adheres. Scatter a few extra chocolate chips on top if desired.
Look for The cups are evenly filled and the streusel covers the batter.
Tip Use an ice cream scoop for even, clean filling.

During baking, the muffins rise and turn golden brown, filling the kitchen with the aroma of butter and chocolate. The streusel crisps and darkens slightly. The tops dome beautifully. A toothpick test ensures they are baked through, and the internal temperature confirms they are safe to eat. The muffins are fragrant, with a crunchy top and a tender interior.

Cooling and Serving

  1. Bake the Muffins
Bake the muffins in the preheated oven for 20–25 minutes, until the tops are golden and a toothpick inserted into the center comes out with only a few moist crumbs. The internal temperature of the muffins should reach 200°F (93°C) if measured.
Look for The tops are golden brown and spring back when lightly pressed.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Rotate the pan halfway through for even browning.
  2. Cool and Serve
Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack. Serve warm or at room temperature. Pull one open to reveal the moist crumb and melted chocolate.
Look for The muffins release easily from the pan and the tops stay crunchy.
Tip Warm muffins have the most molten chocolate.

After cooling for a few minutes in the pan, the muffins release easily and are transferred to a wire rack. They are warm, with a crisp streusel that crunches when bitten. Tearing one open reveals a moist, fluffy crumb with pockets of melted chocolate and juicy raspberries. The muffins are ready to serve, either warm or at room temperature, and will stay fresh for several days.

Common mistakes

Overmixing the batter is the most common mistake; it develops gluten and makes muffins dense and tough. Mix only until the flour disappears, leaving a few lumps. Another issue is using frozen berries without coating them in flour; they can sink to the bottom and create soggy spots.

Toss frozen berries in a tablespoon of flour before folding. Overfilling the muffin cups causes the batter to spill over and create flat, ugly tops. Fill each cup about three-quarters full. Also, don't open the oven door during the first 15 minutes of baking, as the temperature drop can prevent the muffins from rising properly.

How to tell it’s done

The muffins are done when the tops are deep golden brown and a toothpick inserted into the center comes out with only a few moist crumbs clinging to it. The internal temperature of the muffins should register at least 200°F (93°C) on an instant-read thermometer.

The tops should spring back when lightly pressed, and the streusel should look dry and crunchy. If the tops are browning too quickly while the centers are still raw, tent the muffin tin loosely with foil and continue baking. Cool the muffins in the pan for 5 minutes before transferring to a rack to set the crumb.
