Tips for success
For the most dramatic cheese pull, use fresh mozzarella that is well-drained and shredded by hand. Whole-milk mozzarella has a higher fat content, which makes it melt more smoothly and stretch further.
If you prefer a browner crust, leave the skillet uncovered for the last minute of cooking, but watch it closely to avoid burning.
The roll-ups are best served immediately, but if you need to hold them, keep them warm in a low oven (200°F) with the lid on.
To reheat leftovers, place them in a skillet with a splash of water or extra sauce, cover, and warm over medium-low heat until the cheese is melty again. Avoid microwaving, as it can make the pasta rubbery.
Variations
- Meaty Skillet Roll-Ups: Brown 1/2 pound of ground beef or Italian sausage in the skillet before adding the sauce. Drain excess fat, then proceed with the recipe. The meat adds richness and makes the dish more filling.
- Spinach and Ricotta Roll-Ups: Mix 1 cup of ricotta cheese with 1/2 cup of cooked, squeezed spinach and a pinch of nutmeg. Spread this mixture over the pasta sheets before adding the marinara, then roll as directed.
- Vegetable Medley Roll-Ups: Sauté zucchini, bell peppers, and mushrooms until tender, then mix into the marinara sauce. Spoon the vegetable mixture over the pasta sheets and roll. Top with extra mozzarella and bake as usual.
- Spicy Arrabbiata Roll-Ups: Use arrabbiata sauce or add 1/2 teaspoon of red pepper flakes to the marinara for a spicy kick. Finish with a drizzle of chili oil and fresh basil.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or oven.
- Freezer
- Freeze unbaked roll-ups (without the cheese topping) in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before baking.
- Reheat
- Reheat in a skillet over medium-low heat with a splash of water or marinara, covered, until heated through and cheese is melted.
Leftover roll-ups can be stored in an airtight container in the refrigerator for up to 3 days. The sauce may thicken as it cools; add a tablespoon of water or additional marinara when reheating to loosen it. Reheat gently in a skillet or oven to preserve the texture of the pasta and cheese.
The roll-ups can be assembled up to a day in advance. After rolling, place them in the skillet with the sauce, but do not add the cheese. Cover and refrigerate.
When ready to cook, bring the skillet to medium heat, add the mozzarella, cover, and cook until bubbly and heated through. Add a few extra minutes to the cooking time if starting from cold.
Serving ideas
Serve the lasagna roll-ups as a hearty main course with a simple green salad dressed in lemon vinaigrette. The acidity of the salad balances the richness of the cheese and marinara. Crusty garlic bread is also a natural companion, perfect for soaking up the extra sauce from the skillet.
For a more substantial meal, pair the roll-ups with roasted vegetables or a side of sautéed spinach. A glass of Chianti or Sangiovese complements the tomato and basil flavors beautifully.
Garnish with additional fresh basil and a drizzle of good olive oil just before serving for an extra layer of flavor.

Quick Skillet Lasagna Roll-Ups with Endless Cheese Pull

Ingredients
- 8 wavy lasagna pasta sheets
- water, for boiling, to taste
- 1 tbsp kosher salt
- 2 cups marinara sauce
- 2 cups shredded whole-milk mozzarella
- 1/4 cup fresh basil leaves, torn
- cracked black pepper, to taste
Instructions
- Bring a large pot of salted water to a rolling boil. Add the wavy lasagna sheets and cook until al dente according to package directions, usually about 8-10 minutes. Stir occasionally to prevent sticking. Drain the pasta in a colander and rinse briefly with cool water to stop the cooking. Lay the sheets flat on a parchment paper-lined surface, making sure they do not overlap. Pat them dry with paper towels if needed.
- Spread about 1/4 cup of marinara sauce evenly over each cooked lasagna sheet, leaving a small border at the edges. Starting from one short end, roll each sheet tightly but gently into a log. Set the roll-ups aside on the parchment, seam side down, while you heat the skillet.
- Place a large cast iron skillet over medium heat and let it warm for 2-3 minutes. Add the remaining marinara sauce to the skillet, spreading it into an even layer. The sauce should sizzle gently as it hits the hot surface.
- Carefully place the rolled lasagna sheets upright in the skillet, nestled closely together in the sauce. They can touch slightly. Spoon a little sauce over the tops of the roll-ups if there is extra. Let them cook uncovered for 2-3 minutes so the bottoms begin to absorb the sauce and crisp slightly.
- Sprinkle the shredded whole-milk mozzarella evenly over the tops of the roll-ups, covering them completely. The cheese should mound slightly. Cover the skillet with a glass lid and reduce the heat to medium-low. Let the cheese melt slowly, about 5-7 minutes, until it is fully liquefied and bubbling gently.
- Remove the lid and scatter the torn fresh basil leaves over the melted cheese. Finish with a generous grind of cracked black pepper. Using a spatula, carefully lift each roll-up onto a white ceramic plate, spooning extra sauce from the skillet over the top. Serve immediately while the cheese is still stretchy and hot.
