Tips for success
For the thinnest crepes, use a ladle or measuring cup to pour a consistent amount of batter. Tilt the pan immediately to spread the batter evenly.
The first crepe often acts as a test; use it to judge the heat and batter consistency. If it tears, the batter may need a little more liquid or the pan may be too hot.
To keep the crepes warm and pliable while cooking the rest, stack them on a plate and cover with a clean kitchen towel. When rolling, work with one crepe at a time and keep the others covered. If the crepes become too cool to roll, place them in a warm skillet for a few seconds to soften.
Variations
- Berry Blast: Use a mix of sliced strawberries, blueberries, and raspberries. The tartness of berries pairs beautifully with the chocolate crepe and syrup. For extra sweetness, sprinkle the fruit with a little sugar before rolling.
- Tropical Twist: Fill the crepes with mango, pineapple, and kiwi strips. A squeeze of lime juice over the fruit adds brightness. Serve with a coconut-flavored syrup instead of chocolate for a different flavor profile.
- Banana Split: Use sliced bananas and a drizzle of peanut butter or caramel sauce inside the roll. The creamy banana pairs well with the chocolate crepe. Top with a sprinkle of chopped nuts before serving.
- Berry Cheesecake: Spread a thin layer of cream cheese sweetened with a little sugar over the crepe before adding fruit. Use strawberries and blueberries. The creamy filling makes each bite taste like a mini cheesecake.

Store leftover crepe sushi rounds in an airtight container in the refrigerator for up to 2 days. Place a piece of parchment paper between layers to prevent sticking.
The chocolate syrup can be stored separately in the refrigerator for up to 1 week. Let the dessert sit at room temperature for 10 minutes before serving to soften the crepes.
The crepes can be made up to 1 day ahead and kept stacked between sheets of parchment paper in the refrigerator. Bring them to room temperature before rolling. The fruit can be cut a few hours ahead and stored in a covered bowl. Assemble the rolls just before serving to keep the fruit fresh and the crepes tender.
Serving ideas
Arrange the crepe sushi rounds on a platter with the chocolate syrup in a small bowl at the center. The colorful fruit centers make the dish visually appealing, so place the slices cut-side up.
Provide wooden chopsticks or small forks for picking up each piece. This dessert works well as a party appetizer or a playful after-dinner treat.
For a more elegant presentation, dust the plate with a little cocoa powder or confectioners' sugar before arranging the sushi. A few fresh mint leaves can add a pop of green.
Serve the syrup on the side so each person can dip to their liking. The contrast of warm crepes and cool fruit is especially enjoyable when served fresh.

Quick Chocolate Crepe Dessert Sushi

Ingredients
- 1 cup milk
- 2 large eggs
- 3/4 cup all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 2 tbsp granulated sugar
- 1 tbsp unsalted butter, melted
- 1 cup assorted fresh fruit (strawberries, kiwi, mango), cut into thin strips
- 1/2 cup chocolate syrup, for dipping
Instructions
- In a blender, combine the milk, eggs, flour, cocoa powder, sugar, and melted butter. Blend on low speed until the batter is completely smooth, about 20 seconds. Scrape down the sides if needed. The batter should be thin and pourable, similar to heavy cream. Let it rest for 5 minutes so the flour hydrates.
- Heat a nonstick crepe pan or skillet over medium heat. Add a small knob of butter and swirl to coat. Pour about 1/4 cup of batter into the center, tilting the pan to spread it into a thin, even circle. Cook for 1 to 2 minutes until the edges look set and the bottom is lightly browned. Flip with a spatula and cook for another 30 seconds. Transfer to a plate and repeat with the remaining batter.
- Lay one crepe on a cutting board. Arrange a row of fruit strips along the bottom edge, leaving a 1/2-inch border. Roll the crepe tightly around the fruit, tucking the filling as you go. Use a sharp knife to slice the roll into 1-inch rounds. Repeat with the remaining crepes and fruit.
- Arrange the crepe sushi rounds on a serving plate. Pour the chocolate syrup into a small bowl for dipping. Serve immediately, using wooden chopsticks to pick up each piece and dip it into the syrup.
