Tips for success
For the best flavor, use a good-quality cowboy butter with plenty of herbs and garlic.
If you have time, make your own cowboy butter ahead of time—mix softened butter with chopped parsley, thyme, chives, garlic, salt, and pepper, then roll into a log and chill. Slice off medallions as needed.
Serve the roast with a side of crusty bread to soak up the extra gravy. The leftovers are even better the next day, as the flavors continue to meld. You can also use the shredded beef in tacos, sandwiches, or over baked potatoes for a quick lunch.
Variations
- Add Root Vegetables: Add 2 cups of baby carrots and 3 peeled, quartered potatoes to the slow cooker along with the roast. They will cook in the juices and become tender, turning this into a complete one-pot meal.
- Use Different Mushrooms: Substitute cremini or baby bella mushrooms for portobellos. They have a similar earthy flavor and hold up well during long cooking. Slice them thick to maintain texture.
- Make It Spicy: Add 2 sliced jalapeños or 1 teaspoon of red pepper flakes along with the garlic for a kick of heat. The spice will mellow as it cooks, adding a subtle warmth to the gravy.
- Herb Swap: If you don't have cowboy butter, use 4 tablespoons of unsalted butter mixed with 1 teaspoon dried thyme, 1 teaspoon dried rosemary, and 2 cloves of minced garlic. This creates a similar herb-garlic flavor profile.

Serving ideas
Serve the shredded beef over warm buttered egg noodles, spooning plenty of the mushroom-butter gravy over the top.
The noodles soak up the sauce and balance the richness of the beef. For a lighter option, serve over mashed potatoes, polenta, or a bed of sautéed greens.
This dish pairs well with a simple green salad or roasted vegetables to add freshness and color.
A glass of full-bodied red wine, such as a Cabernet Sauvignon or Merlot, complements the savory richness. Leftovers can be piled onto toasted rolls for an easy sandwich the next day.

Portobello Herb Garlic Butter Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 8 oz portobello mushrooms, sliced thick
- 2 tbsp minced garlic
- 4 oz cowboy butter, cut into medallions
- Buttered egg noodles, for serving
Instructions
- Place the beef chuck roast in the center of the slow cooker insert. Season generously with salt and pepper on all sides. Scatter the sliced portobello mushrooms over and around the roast, then sprinkle the minced garlic evenly over the top.
- Place the cowboy butter medallions evenly across the top of the roast. There is no need to stir or mix—the butter will melt and blend into the juices as the roast cooks.
- Cover the slow cooker with the lid. Cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and shreds easily. Let it rest for 3 minutes before slicing.
- Remove the roast from the slow cooker and place it on a cutting board. Let it rest for at least 10 minutes. Using two forks, shred the beef into bite-sized pieces, discarding any large pieces of fat.
- Return the shredded beef to the slow cooker and stir it into the mushroom-butter gravy. Let it sit on the warm setting for 10 minutes so the beef absorbs the sauce.
- Spoon the shredded beef and mushrooms over warm buttered egg noodles. Drizzle with extra gravy from the slow cooker and serve immediately.
