Tips for success
For the best flavor, choose a chuck roast with good marbling—the fat renders during cooking and keeps the meat moist. If you have time, sear the roast in a hot skillet before adding it to the slow cooker; this adds a deeper color and flavor, though it's not required.
Slice the mushrooms thickly so they don't disintegrate during the long cook. Use salted butter for even seasoning, but if using unsalted, add a pinch of salt to the pot.
The slow cooker should be at least 6 quarts to hold the roast and mushrooms comfortably. If your slow cooker runs hot, check the roast an hour earlier.
For a thicker jus, remove the meat and mushrooms, then simmer the liquid on the stovetop for a few minutes. You can also whisk in a little cornstarch slurry. Always let the roast rest before shredding to keep it juicy.
Variations
- Herb-Infused: Add 2 sprigs of fresh rosemary and 4 sprigs of fresh thyme to the pot before cooking. Remove the herb stems before shredding. The herbs add an aromatic note that complements the butter and mushrooms beautifully.
- Red Wine Jus: Deglaze the slow cooker with 1/2 cup dry red wine after cooking, then simmer on the stovetop to reduce. This adds a deep, complex flavor to the jus. Skip this step if you prefer a non-alcoholic version.
- Spicy Kick: Add 1 teaspoon of red pepper flakes or a minced fresh chili to the pot with the garlic. The heat balances the richness of the butter and beef. Adjust the amount to your tolerance.
- Vegetable Boost: Layer 2 chopped carrots and 2 celery stalks under the roast for extra vegetables. They will soften and absorb the meaty juices. This makes the meal more complete and adds a subtle sweetness.

Serving ideas
Serve the shredded beef and mushrooms over creamy mashed potatoes, polenta, or egg noodles. Spoon the golden jus generously over the top. A side of crusty bread or a simple green salad completes the meal. The rich, buttery sauce is perfect for soaking up with bread.
For a low-carb option, serve over cauliflower mash or roasted vegetables. The beef also makes excellent sandwiches—pile it on toasted rolls with a little horseradish or pickled onions.
Leftovers can be used in tacos, quesadillas, or over a baked potato. The possibilities are endless.

Portobello Herb Butter Chuck Roast: 5-Ingredient Crockpot Dinner

Ingredients
- 3 1/2 lb beef chuck roast
- 8 oz portobello mushroom caps, thickly sliced
- 2 tbsp minced garlic
- 1/2 cup salted butter (1 stick)
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the thickly sliced portobello mushroom caps over and around the roast. Sprinkle the minced garlic evenly over the top.
- Place the whole stick of salted butter on top of the seasoned roast. It will melt and baste the meat as it cooks, creating a rich, golden jus.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and easily shreds. The roast should reach an internal temperature of at least 145°F (63°C) for safety, but for fall-apart texture, cook until it shreds easily. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest, covered, for at least 10 minutes. This allows the juices to redistribute and makes the meat easier to shred.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the mushrooms and jus. The meat should pull apart easily into thick, tender strands.
- Spoon the shredded beef and mushrooms over mashed potatoes or your favorite side. Drizzle with extra jus from the slow cooker.
