Tips for success
For the best flavor, use a good-quality soy sauce — low-sodium works fine, but you may want to adjust salt later.
If you prefer a thicker glaze, mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the sauce after cooking, then simmer until thickened. This gives a more clingy texture.
Cut the chicken into even, bite-sized cubes so they cook at the same rate. If you like a little heat, add a pinch of red pepper flakes or a splash of sriracha.
For a deeper color, use dark soy sauce in place of half the regular soy. The dish is forgiving, so feel free to adjust the sweetness to taste.
Variations
- Spicy Pineapple Chicken: Add 1/2 teaspoon red pepper flakes or 1 tablespoon sriracha along with the honey and soy sauce for a sweet-heat kick. Garnish with fresh cilantro and sliced jalapeños.
- Garlic-Ginger Version: Stir 2 minced garlic cloves and 1 tablespoon grated fresh ginger into the honey-soy mixture before pouring over the chicken. This adds aromatic depth and pairs beautifully with the pineapple.
- Chicken Thighs Option: Swap chicken breasts for boneless, skinless thighs. Cut them into cubes and cook the same way. Thighs are more forgiving and stay extra moist, even with longer cooking times.
- Slow Cooker Pineapple Pork: Replace the chicken with cubed pork shoulder (about 2 pounds). Cook on LOW for 6-8 hours until fork-tender. The sauce works just as well with pork, and the result is rich and succulent.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of water if needed.
- Freezer
- Freeze the cooked chicken and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until warmed through. Add a splash of water or chicken broth to loosen the sauce if needed.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld. Reheat gently in the microwave or on the stovetop, adding a splash of water if the sauce thickens too much.
Cut the chicken and mix the honey and soy sauce a day ahead. Store them separately in the refrigerator. When ready to cook, layer everything in the slow cooker and cook as directed. This makes morning prep even quicker.
Serving ideas
Serve the chicken and pineapple over steamed basmati or jasmine rice to soak up the delicious sauce.
For a low-carb option, serve over cauliflower rice or alongside steamed vegetables. The dish also works well in lettuce wraps or as a filling for tacos.
Garnish with sliced green onions, sesame seeds, or chopped cilantro for a fresh finish.
The sweet-savory flavor pairs well with a crisp green salad or roasted broccoli. For a complete meal, add a side of stir-fried vegetables or a simple cucumber salad.

Pineapple Honey Soy Chicken Bites: 5-Ingredient Crockpot Dinner

Ingredients
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 20 oz pineapple chunks in juice, undrained
- 1/4 cup honey
- 1/4 cup soy sauce
Instructions
- Place the cubed chicken breasts in the bottom of a 6-quart slow cooker. Spread them into an even layer so they cook evenly.
- Pour the pineapple chunks and their juice over the chicken. Use a spoon to gently distribute the chunks so they are mixed with the chicken.
- Drizzle the honey and soy sauce evenly over the top of the chicken and pineapple. Do not stir — the layers will meld as they cook.
- Cover the slow cooker and cook on LOW for 4 hours, or until the chicken is cooked through and tender. Do not lift the lid during the first 3 hours.
- After 4 hours, check the chicken by cutting into a piece. It should be opaque and tender. If the chicken is not yet tender, continue cooking for 30 more minutes.
- If the sauce is too thin for your liking, remove the chicken and pineapple with a slotted spoon, then simmer the sauce on the stovetop or set the slow cooker to HIGH and cook uncovered for 15 minutes.
- Spoon the chicken and pineapple over steamed basmati rice, and drizzle with the remaining glaze. Serve hot.
