Tips for success

For an extra layer of flavor, consider letting the steaks sit uncovered on a wire rack in the refrigerator for several hours or overnight. This process draws out surface moisture and dries the exterior of the meat, which helps to create an even more spectacular, deeply caramelized, and crispy crust when the steak hits the hot cast-iron skillet.

When basting the steak, tilt the skillet slightly toward you so the melted butter pools at the bottom edge of the pan. This makes it much easier to scoop up large spoonfuls of the foaming, garlic-infused butter to pour over the top of the meat.

Work quickly but carefully to prevent the minced garlic from burning in the hot fat, as burnt garlic will quickly impart a bitter, unpleasant taste to the entire dish.

Variations

  • Rosemary Garlic Butter: Substitute the fresh thyme with fresh rosemary sprigs during the basting process for a more robust, pine-like herbal aroma that complements the beef perfectly.
  • Spicy Garlic Butter: Add a pinch of crushed red pepper flakes to the melting butter alongside the garlic to infuse the steak with a subtle, warming heat.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freezing is not recommended as it degrades the tender texture of the cooked steak.
Reheat
Reheat gently in a skillet over low heat with a splash of broth or butter until warmed through to 145°F (63°C).

Cool any leftover steak to room temperature for no more than two hours before storing. Place the steak and any remaining garlic butter in an airtight container and store in the refrigerator.

Leftovers should be consumed within three to four days. To maintain the quality of the meat, avoid freezing cooked steak if possible, as the freezing and thawing process can compromise the tender texture and juiciness.

While steak is best enjoyed fresh from the skillet, some preparation can be completed ahead of time. The herb garlic butter can be prepared up to three days in advance and stored in the refrigerator, ready to be melted over the steak. You can also trim the steaks a few hours before cooking, keeping them uncovered in the refrigerator to dry the surface for a superior sear.

Serving ideas

Present the steak on a warm wooden board or serving platter to retain its heat. Slice the meat against the grain into thick, uniform slices to ensure maximum tenderness in every bite.

Pour the warm, seasoned garlic butter from the skillet directly over the sliced steak just before serving, allowing the rich, aromatic flavors to seep into every cut. Top with a few fresh sprigs of thyme for a beautiful, rustic presentation.

This rich and savory steak pairs beautifully with classic steakhouse side dishes. Serve it alongside creamy garlic mashed potatoes, roasted asparagus, or a crisp green salad with a light vinaigrette to balance the richness of the butter.

A side of warm, crusty bread is also highly recommended to soak up any leftover garlic butter on the plate, ensuring that not a single drop of this delicious pan sauce goes to waste.

Frequently asked questions

Can a different type of pan be used instead of cast iron?
Yes, a heavy-bottomed stainless steel skillet can be used, though it may not retain heat as efficiently as cast iron.
Why must the steak rest before slicing?
Resting allows the muscle fibers to relax and the juices to redistribute, keeping the steak tender and preventing moisture loss.
How can the garlic be prevented from burning during basting?
Add the garlic and butter during the final minutes of cooking, and keep spooning the butter over the steak to regulate the temperature.

Perfect Cast-Iron Garlic Butter Steak

Ingredients

  • 2 thick-cut steaks
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 4 sprigs fresh thyme

Instructions

  1. Pat the steaks completely dry with paper towels. Ensure the surface is dry to the touch, which promotes a much better sear when the meat hits the hot pan.
  2. Heat a heavy cast-iron skillet over high heat until smoking. Place the steaks in the hot pan and sear without moving for two to three minutes until a deep, caramelized crust forms. Flip and sear the other side.
  3. Reduce the heat slightly and add the butter, minced garlic, and fresh thyme sprigs to the skillet. Tilt the pan and spoon the foaming garlic butter continuously over the steaks for two minutes until the internal temperature reaches 145°F (63°C) for safe consumption, then let the meat rest for at least 3 minutes.
  4. Transfer the basted steaks to a clean wooden board. Let the meat rest for at least three minutes to allow the juices to redistribute and ensure maximum tenderness.
  5. Slice the rested steak against the grain into thick, even slices. Pour the remaining warm garlic butter from the pan over the top and serve immediately.
