Tips for success
For the best flavor, do not skip the pepperoncini. They are the star that makes this dish different from a plain pot roast. If you prefer less heat, remove the stems and seeds before adding them.
The peppers will still infuse the gravy with their tangy, slightly spicy character. You can also add a splash of the pepperoncini brine to the gravy for extra zing, but taste first—the ranch and au jus mixes are already salty.
To make this recipe even easier, assemble everything in the slow cooker insert the night before, then store it in the refrigerator. In the morning, simply place the insert in the slow cooker base and turn it on.
This is a great make-ahead option for busy mornings. Just be sure to increase the cooking time by about 30 minutes if starting from cold, since the slow cooker has to bring the ingredients up to temperature.
Variations
- Spicy Kick: Add 1/2 teaspoon of crushed red pepper flakes or a diced jalapeño with the pepperoncini for extra heat. The spice will infuse the gravy as it cooks, giving the beef a gentle warmth.
- Herby Twist: Stir in 2 teaspoons of dried oregano or Italian seasoning with the ranch and au jus mixes. This adds an aromatic, Mediterranean note that pairs well with the pepperoncini.
- Beef and Noodles: Instead of buns, serve the shredded beef and gravy over cooked egg noodles. The noodles soak up the rich sauce, making a comforting one-bowl meal.
- Cheesy Melt: After piling the beef onto the buns, top with a slice of provolone or mozzarella and broil for 1 to 2 minutes until melted. The cheese adds a creamy, savory layer.

Leftover shredded beef and gravy will keep in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the gravy has thickened too much. The flavors continue to meld overnight, making leftovers even more delicious the next day.
This recipe is perfect for meal prep. Cook the roast as directed, then store the shredded beef and gravy separately in the refrigerator for up to 4 days. Reheat and serve on fresh buns, over rice, or with mashed potatoes. You can also freeze the shredded beef in portion-sized containers for up to 3 months.
Serving ideas
Serve the pepperoncini ranch pot roast on toasted brioche slider buns for a fun, hearty sandwich. Pile the beef high, add a couple of pepperoncini, and spoon over extra gravy.
The buns soak up the sauce without becoming soggy, and the sweet, buttery brioche balances the tangy, savory filling. Add a side of pickles or a simple green salad to round out the meal.
For a more traditional presentation, serve the shredded beef over mashed potatoes, egg noodles, or creamy polenta. The rich gravy acts as a sauce, coating each bite.
A side of roasted vegetables or a crusty loaf of bread for sopping up the gravy completes the plate. This is a versatile dish that works for both casual family dinners and more dressed-up gatherings.

Pepperoncini Ranch Pot Roast: 5-Ingredient Crockpot Dinner

Ingredients
- 3 1/2 lb bottom round roast
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 whole pepperoncini peppers
- 1 cup brown gravy
- 4 tbsp unsalted butter, cut into pats
- toasted brioche slider buns, for serving
Instructions
- Place the bottom round roast in the center of a 7-quart slow cooker. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over and around the roast.
- Pour the brown gravy over the roast, letting it flow down the sides. Dot the top of the roast with the pats of unsalted butter. Do not stir—just leave the layers as they are.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the beef is fork-tender and easily shreds. The roast should be cooked to an internal temperature of at least 145°F (63°C), though it will be far beyond that after the long braise. Let it rest for 3 minutes before slicing.
- Once the roast is fork-tender, transfer it to a cutting board. Use two forks to shred the beef into large chunks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the gravy.
- Toast the brioche slider buns until golden. Pile the shredded beef and pepperoncini onto the buns, spooning extra gravy over the top. Serve immediately while hot.
