Tips for success
For the best flavor, brown the roast in a hot skillet with a little oil before adding it to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste.
If you have the extra 10 minutes, it's worth it. However, the recipe works beautifully without this step, so don't let it deter you on busy days.
To make the gravy thicker, remove the beef and peppers after cooking, then transfer the liquid to a saucepan. Simmer over medium-high heat for 10–15 minutes, or until reduced by about a third.
Whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) if desired. Return the beef to the pot and serve.
Variations
- Spicy Kick: Add 1–2 teaspoons of crushed red pepper flakes or a chopped jalapeño along with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the pepperoncini brine to the pot.
- Herb Swap: Replace the garlic-herb compound butter with a mixture of softened butter, fresh rosemary, thyme, and garlic. This gives the roast a more earthy, aromatic flavor that pairs well with the tangy peppers.
- Beef Broth Boost: For a saucier result, add 1/2 cup of beef broth to the slow cooker before cooking. This creates a thinner, more abundant gravy that's perfect for soaking into bread or mashed potatoes.
- Low-Carb Option: Serve the shredded beef over cauliflower mash or zucchini noodles instead of egg noodles. The rich gravy and peppers are naturally low in carbs, making this a satisfying keto-friendly meal.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently, adding a splash of broth to keep the meat moist.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until warmed through. Add a little beef broth or water if needed to loosen the gravy.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much.
This recipe is ideal for meal prep. Assemble all ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You can also cook the roast fully, shred it, and store it in the refrigerator for up to 3 days before reheating.
Serving ideas
Serve this pot roast over a bed of warm buttered egg noodles, which soak up the rich gravy beautifully. Mashed potatoes, polenta, or crusty bread are also excellent choices.
For a lighter option, try it over steamed rice or quinoa. Garnish with fresh parsley or chopped pepperoncini for a pop of color and extra tang.
This dish is a complete meal on its own, but a simple green salad with a vinaigrette adds a refreshing contrast. Roasted vegetables like carrots or green beans make a hearty side. For a cozy dinner, pair with a glass of red wine or a cold beer. Leftovers are fantastic in sandwiches or tacos the next day.

Pepperoncini Ranch Garlic Butter Pot Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 1 oz dry ranch dressing mix (1 packet)
- 1 oz dry au jus gravy mix (1 packet)
- 10 whole pepperoncini peppers
- 4 oz garlic-herb compound butter (cowboy butter), cut into medallions
Instructions
- Place the beef bottom round roast in the center of a 6-quart slow cooker insert. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over the roast, distributing them evenly.
- Place the four medallions of garlic-herb compound butter on top of the roast, spacing them evenly. They will melt during cooking and create a rich, flavorful gravy.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the beef is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for safety, but for fall-apart texture, cook until it exceeds 200°F (93°C). Let it rest for 3 minutes before slicing.
- Once the beef is cooked, turn off the slow cooker and let the roast rest in the juices for at least 10 minutes. This allows the juices to redistribute, making the meat more tender and flavorful.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the gravy and peppers. Serve hot over buttered egg noodles, mashed potatoes, or crusty bread, spooning extra gravy over the top.
