Tips for success
For the best flavor, let the shredded beef sit in the juices for at least 5 minutes before serving. This allows the meat to soak up the gravy and become even more succulent.
If you have time, you can also transfer the beef to a cutting board, shred it, then return it to the slow cooker and keep it on 'warm' until ready to serve.
The gravy is the best part — don't let it go to waste. Serve it generously over the beef and noodles.
If you like a thicker gravy, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the hot liquid during the last 30 minutes of cooking. But honestly, the natural juices are so flavorful that you may not want to thicken them at all.
Variations
- Spicy Kick: Add 1 teaspoon of red pepper flakes or a diced jalapeño along with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the pepper brine to the pot.
- Onion and Garlic: Layer a sliced onion and 4 minced garlic cloves under the roast before adding the seasonings. This adds sweetness and depth to the gravy.
- Herb-Rubbed: Skip the ranch mix and instead rub the roast with 2 teaspoons dried oregano, 1 teaspoon garlic powder, and 1 teaspoon onion powder. Keep the au jus mix for the savory base.
- Beer-Braised: Replace 1/2 cup of the cooking liquid with your favorite beer (like a lager or stout) for a malty, complex flavor. Add it along with the other ingredients before cooking.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth or water to keep it moist.
- Freezer
- Freeze the shredded beef and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, adding a splash of beef broth or water to loosen the sauce.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The beef will keep well and the flavors will continue to meld. Reheat gently in the microwave or on the stovetop with a splash of water or beef broth to loosen the sauce.
You can assemble the entire dish the night before: place the roast in the slow cooker insert, sprinkle with seasonings, add peppers and butter, then cover and refrigerate overnight. In the morning, simply put the insert in the slow cooker and turn it on. This makes the recipe even more convenient for busy days.
Serving ideas
Serve the shredded beef over a bed of warm buttered egg noodles, which soak up the rich gravy beautifully. Mashed potatoes are another classic choice — the creamy texture pairs perfectly with the tangy, savory beef.
For a lower-carb option, serve it over cauliflower mash or alongside roasted vegetables. The pepperoncini add a pop of color and a burst of acidity that brightens every bite.
This dish is hearty enough to be a main course on its own, but it also works well as a filling for tacos, sandwiches, or baked potatoes.
Pile the beef onto crusty rolls for a delicious French dip-style sandwich, or spoon it over rice for a comforting bowl. Leftovers are just as good the next day, so make extra if you can.

Pepperoncini Ranch Garlic Butter Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz dry ranch dressing mix (1 packet)
- 1 oz dry au jus gravy mix (1 packet)
- 10 whole pepperoncini peppers
- 4 tbsp garlic-herb compound cowboy butter (cut into medallions)
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. Sprinkle the dry ranch mix and au jus mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over and around the roast.
- Place the four medallions of cowboy butter on top of the roast, spacing them evenly. They will melt and baste the meat as it cooks.
- Cover the slow cooker and cook on LOW for 8 hours, or on HIGH for 5-6 hours, until the beef is fork-tender and easily shreds. Do not open the lid during cooking except to check near the end. Let it rest for 3 minutes before slicing.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the juices and peppers. Let the shredded beef rest in the hot liquid for 5 minutes so it soaks up the gravy.
- Spoon the shredded beef and peppers over warm buttered egg noodles or mashed potatoes. Use a slotted spoon to serve, and drizzle extra gravy over the top.
