Tips for success
For the most flavorful result, choose a brisket with good marbling. The fat renders during cooking, adding moisture and flavor.
If you have time, sear the brisket in a hot skillet before adding it to the slow cooker to develop a deeper crust and extra flavor, though this step is optional.
The pepperoncini are key to the dish's character. They provide a mild heat and a tangy, vinegary brightness that balances the richness of the beef and butter.
If you enjoy more heat, add a few extra peppers or a splash of the pepperoncini brine to the slow cooker.
Variations
- Spicy Version: Add 1-2 sliced jalapeños or a teaspoon of red pepper flakes along with the pepperoncini for extra heat. You can also use a spicier pepper variety.
- Beef Sandwiches: Pile the shredded beef onto toasted hoagie rolls and top with provolone cheese. Broil until the cheese melts for a delicious sandwich.
- Add Vegetables: Place sliced onions and carrots in the bottom of the slow cooker before adding the brisket. They will cook in the juices and become tender and flavorful.
- Low-Carb Option: Serve the shredded beef over cauliflower rice or alongside roasted vegetables instead of egg noodles for a lower-carb meal.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the shredded beef and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over low heat, adding a splash of broth or water to loosen the sauce.
Store leftover brisket and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will meld and intensify. Reheat gently on the stovetop or in the microwave, adding a splash of water or beef broth if needed to loosen the sauce.
This recipe is ideal for making ahead. You can assemble the brisket in the slow cooker insert and refrigerate it overnight, then start cooking the next morning.
Alternatively, cook the brisket fully, shred it, and store it in the refrigerator for up to 3 days. Reheat gently before serving.
Serving ideas
Serve the shredded brisket over warm buttered egg noodles for a hearty, comforting meal. The noodles soak up the rich, buttery sauce beautifully.
You can also serve it on toasted sandwich rolls for a delicious beef sandwich, or over mashed potatoes for a classic pairing.
Garnish with additional pepperoncini or a sprinkle of fresh herbs like parsley or chives, if desired. The dish is rich and satisfying on its own, but a side of crusty bread or a simple green salad would round out the meal nicely.

Pepperoncini Ranch Garlic Butter Brisket

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 oz dry ranch mix
- 1 oz au jus gravy mix
- 10 pepperoncini peppers
- 4 medallions garlic-herb compound butter
- 12 oz buttered egg noodles, cooked
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry ranch mix and au jus gravy mix evenly over the top of the brisket. Scatter the whole pepperoncini peppers over the meat, distributing them evenly.
- Place the four medallions of garlic-herb compound butter on top of the seasoned brisket and peppers. They will melt during cooking and create a rich, savory sauce.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the brisket is fork-tender and easily shreds. The internal temperature of the meat should reach at least 145°F (63°C) for food safety, but for best tenderness, cook until it shreds easily. Let it rest for 3 minutes before slicing.
- Once the brisket is fork-tender, remove it from the slow cooker to a cutting board. Let it rest for at least 3 minutes. Then, using two forks, shred the beef into bite-sized pieces, discarding any large fat pieces.
- Return the shredded beef to the slow cooker and stir it into the sauce, coating the meat well. Keep the slow cooker on warm until ready to serve.
- Spoon the shredded brisket and sauce over warm buttered egg noodles. Serve immediately, with extra pepperoncini on the side if desired.
