Tips for success
For the best flavor, use a good-quality whole-grain Dijon mustard. The whole seeds add a pleasant texture and a more pronounced mustard flavor.
If you only have smooth Dijon, that will work too, but you may want to add a little extra to compensate for the milder taste. The sour cream should be full-fat for the richest, creamiest sauce, but reduced-fat will also work without compromising the texture too much.
To make shredding even easier, use a hand mixer on low speed to break up the pork right in the slow cooker. This works surprisingly well and saves time. Just be careful not to overmix, or the meat will become too fine.
If you prefer a thicker sauce, you can remove the pork and simmer the remaining liquid on the stovetop for a few minutes to reduce it, then return the meat to the pot.
Variations
- Spicy Kick: Add 1-2 teaspoons of crushed red pepper flakes or a chopped jalapeño along with the pepperoncini for extra heat. You can also use hot pepperoncini or add a splash of the pepperoncini brine to the slow cooker.
- Herb Twist: Stir in 2 tablespoons of fresh chopped parsley or cilantro just before serving. The fresh herbs brighten the dish and add a pop of color. You can also add a teaspoon of dried oregano or thyme with the seasonings.
- Cheesy Finish: Sprinkle 1 cup of shredded provolone or Monterey Jack cheese over the shredded pork during the last 30 minutes of cooking, then stir to melt. This adds a rich, creamy texture and a savory depth that pairs well with the tangy sauce.
- BBQ Fusion: Swap the ranch mix for 2 tablespoons of your favorite BBQ rub and reduce the sour cream to 1/4 cup. Add 1/2 cup of BBQ sauce along with the au jus. This creates a smoky, tangy version that is perfect for sandwiches.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of broth or water to maintain moisture.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 30-second intervals, stirring between, or on the stovetop over medium-low heat with a little liquid until heated through.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The pork will absorb more of the sauce as it sits, so it may become even more flavorful. Reheat gently in the microwave or on the stovetop with a splash of broth or water to loosen the sauce if needed. The dish also freezes well for up to 3 months; thaw overnight in the refrigerator before reheating.
This recipe is perfect for meal prep. You can assemble the entire dish the night before, cover the slow cooker, and refrigerate it overnight. In the morning, simply place the insert in the slow cooker and start cooking.
You may need to add 30 minutes to the cooking time since you are starting from cold. Alternatively, you can cook the pork fully, shred it, and store it in the refrigerator or freezer for quick meals throughout the week.
Serving ideas
This shredded pork is incredibly versatile. Serve it over steamed white or brown rice to soak up the creamy sauce. It also makes fantastic sandwiches—pile it high on toasted buns with a few slices of provolone or pepper jack cheese.
For a lighter option, serve it on a bed of greens with a squeeze of fresh lime juice. The tangy, savory flavors pair well with pickled vegetables, coleslaw, or a simple cucumber salad.
For a fun dinner, use the pork as a filling for tacos or burritos. Warm corn or flour tortillas, add a generous scoop of the pork, and top with shredded cabbage, avocado, and a drizzle of the cooking liquid. You can also stuff it into baked potatoes or sweet potatoes for a hearty, satisfying meal. The possibilities are endless, so get creative and enjoy the leftovers.

Pepperoncini Ranch Dijon Cream Pork Sirloin Roast

Ingredients
- 3 1/2 lb boneless pork sirloin roast
- 1 oz dry ranch dressing mix (1 packet)
- 1 oz dry au jus gravy mix (1 packet)
- 10 whole pepperoncini peppers
- 1/2 cup sour cream
- 2 tbsp whole-grain Dijon mustard
- 1/2 cup beef au jus
Instructions
- Place the pork sirloin roast in the center of a 6-quart slow cooker. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over and around the roast.
- Dollop the sour cream over the top of the roast. Add the whole-grain Dijon mustard in small spoonfuls, spreading it slightly. Pour the beef au jus along the side of the roast, not directly over the seasonings, so the dry mixes stay in place.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 4 to 5 hours, until the pork is fork-tender and easily shreds. The internal temperature of the pork should reach at least 145°F (63°C) for food safety, but for shredding it will be much higher, around 200°F (93°C). Let it rest for 3 minutes before slicing.
- Once the pork is fully cooked and tender, turn off the slow cooker. Let the roast rest in the cooking liquid, uncovered, for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
- Remove the roast from the slow cooker to a cutting board or large bowl. Using two forks, shred the pork into bite-sized pieces, discarding any large pieces of fat. The meat should pull apart easily with little resistance.
- Return the shredded pork to the slow cooker and stir it gently into the cooking liquid, sour cream, and mustard mixture. The sauce should coat the meat evenly. Taste and adjust seasoning if needed, but the ranch and au jus are usually salty enough.
- Serve the shredded pork hot, spooned over steamed rice, on sandwiches, or as a filling for tacos. Garnish with some of the cooked pepperoncini if desired. The pork is rich, tangy, and creamy.
