Tips for success
For the best flavor, use full-fat sour cream. Low-fat or nonfat versions can separate and become grainy during the long cooking time. If you're concerned about richness, you can reduce the sour cream to 1/3 cup, but the sauce will be thinner.
Another tip is to use jarred pepperoncini, which are already pickled and have a nice tang. You can leave them whole or slice them, but whole peppers hold their shape better.
If you want a thicker sauce, remove the beef and peppers from the slow cooker after cooking, then transfer the sauce to a saucepan and simmer on the stovetop for 10 to 15 minutes, or until reduced.
You can also whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) and cook until thickened. For a spicier dish, add a few tablespoons of the pepperoncini brine along with the peppers.
Variations
- Spicy Pepperoncini Beef: Add 1/4 cup of pepperoncini brine to the slow cooker along with the peppers, and use hot pepperoncini or add a sliced jalapeño for extra heat. The brine adds a tangy, spicy kick that intensifies the sauce.
- Garlic Lover's Roast: Stud the chuck roast with 4 to 6 cloves of garlic by making small slits and pushing the garlic cloves in. The garlic will infuse the meat as it cooks, adding a savory depth.
- Creamy Mushroom Version: Add 8 oz of sliced cremini mushrooms along with the pepperoncini. The mushrooms will release their liquid and add an earthy flavor that pairs well with the creamy sauce.
- Low-Carb Bowl: Serve the beef over cauliflower rice or zucchini noodles instead of white rice. The dish remains satisfying and low in carbs, while still delivering the creamy, tangy sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the cooked beef and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little beef broth or water if the sauce has thickened.
Leftover pepperoncini ranch beef can be stored in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the beef will remain moist when reheated.
To reheat, place the desired amount in a saucepan over medium-low heat, adding a splash of beef broth or water if the sauce has thickened too much. Alternatively, reheat in the microwave in 30-second bursts, stirring in between, until hot.
This recipe is ideal for making ahead. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. If you have leftovers, they make excellent sandwiches or tacos. The cooked beef also freezes well for up to 3 months.
Serving ideas
Serve the pepperoncini ranch beef over steamed white rice, which soaks up the creamy, tangy sauce beautifully. For a low-carb option, serve it over cauliflower rice or alongside roasted vegetables. The beef also shines in soft tortillas as tacos or burritos, topped with a little extra sour cream and fresh cilantro.
For a heartier meal, pair the beef with mashed potatoes or egg noodles. The sauce is thick and rich, so it clings to whatever you serve it with. A simple green salad with a bright vinaigrette cuts through the richness nicely. Crusty bread is also a must for sopping up every last bit of the gravy.

Pepperoncini Ranch Dijon Cream Chuck Roast

Ingredients
- 3 1/2 lb beef chuck roast
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 pepperoncini peppers
- 1/2 cup sour cream
- 2 tbsp whole-grain Dijon mustard
- 1/2 cup prepared au jus
Instructions
- Place the beef chuck roast in the center of a 6-quart slow cooker. The roast should fit snugly but not overlap the sides. If the roast is very thick, it can be left whole—the long cooking time will break it down completely.
- Sprinkle the dry ranch dressing mix and the dry au jus gravy mix evenly over the top of the roast. Use your fingers or a spoon to spread the powders so they cover as much surface area as possible.
- Scatter the whole pepperoncini peppers over the top of the seasoned roast. Arrange them evenly so they are distributed across the surface. They will soften and infuse the sauce with their tangy, slightly spicy flavor.
- Dollop the sour cream over the roast, then add the whole-grain Dijon mustard. Use a spoon to spread them slightly, but do not stir. These ingredients will melt into the sauce as the slow cooker works.
- Pour the prepared au jus along the side of the roast, not directly over the top. This keeps the seasoning and toppings in place while adding moisture to the bottom of the slow cooker.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours. The roast is done when it is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for food safety, but the long cooking time will take it well beyond that. Let it rest for 3 minutes before slicing.
- Remove the roast from the slow cooker and place it on a cutting board. Let it rest for at least 3 minutes. Use two forks to shred the beef into bite-size pieces, discarding any large pieces of fat.
- Stir the sauce in the slow cooker well to combine the sour cream, mustard, and au jus into a smooth, velvety gravy. Taste and adjust the seasoning if needed, but the ranch and au jus mixes are usually salty enough.
- Return the shredded beef to the slow cooker and toss it in the sauce until every piece is coated. Let it sit on the warm setting for 10 to 15 minutes so the beef absorbs the sauce and stays hot.
- Spoon the creamy pepperoncini ranch beef over steamed white rice, or serve it on its own with crusty bread. The tangy, creamy sauce is perfect for sopping up.
