Tips for success
For the best flavor, use full-fat sour cream and a good-quality whole-grain Dijon mustard. The pepperoncini can be left whole or sliced; whole ones soften and become mellow as they cook.
If you prefer a smoother gravy, you can puree the peppers and some of the liquid before mixing with the beef. For a thicker sauce, remove the beef and simmer the liquid on the stovetop for 10-15 minutes.
This roast is incredibly versatile. Serve it over mashed potatoes, egg noodles, or polenta instead of rice. The leftovers make excellent sandwiches or tacos.
The gravy is also great for dipping crusty bread. If you have time, searing the roast in a hot skillet before adding it to the slow cooker adds a deeper, caramelized flavor, though it is not necessary.
Variations
- Spicy Pepperoncini Roast: Add 1/4 cup of the pepperoncini brine to the slow cooker along with the au jus, and use hot pepperoncini or add a chopped jalapeño for extra heat. The result is a tangier, spicier gravy that still has the creamy finish.
- Herbed Ranch Roast: Stir 1 teaspoon of dried oregano and 1 teaspoon of dried basil into the ranch and au jus mixes before sprinkling. This adds an herby, Italian-inspired note that complements the pepperoncini and Dijon.
- Smoky Paprika Roast: Add 1 tablespoon of smoked paprika to the dry seasoning mix. The smoky flavor pairs well with the creamy sauce and gives the roast a deeper, more complex taste.
- Mushroom and Onion Roast: Add 8 ounces of sliced cremini mushrooms and 1 large sliced onion to the bottom of the slow cooker before placing the roast on top. The mushrooms and onion soften and meld into the gravy, adding earthy sweetness and extra body.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth to loosen the gravy.
- Freezer
- Freeze the shredded beef and gravy in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbly. Add a little beef broth if needed.
Store any leftover roast and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much.
This recipe is perfect for meal prep. Assemble the roast in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
You can also cook the roast fully, shred it, and store it in the refrigerator for up to 4 days. Reheat gently before serving.
Serving ideas
Serve the shredded beef over steamed white rice, spooning the gravy generously over the top. The pepperoncini are soft and edible; include them for extra flavor.
A side of crusty bread or a simple green salad rounds out the meal. For a low-carb option, serve over cauliflower rice or alongside roasted vegetables.
This roast is hearty enough to be a main course on its own, but it also works well in sandwiches, tacos, or quesadillas. The creamy, tangy gravy pairs beautifully with the richness of the beef. Garnish with fresh parsley or chives if desired, though the dish is delicious as is.

Pepperoncini Ranch Dijon Cream Bottom Round Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 whole pepperoncini peppers
- 1/2 cup sour cream
- 2 tbsp whole-grain Dijon mustard
- 1/2 cup beef au jus
- Steamed white rice, for serving
Instructions
- Place the beef bottom round roast in the center of a 6-quart slow cooker. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers over the roast, tucking a few around the sides.
- Dollop the sour cream over the roast in several spoonfuls. Spread the whole-grain Dijon mustard over the sour cream. Pour the beef au jus along the side of the roast, being careful not to rinse off the seasonings.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or until the beef is fork-tender and easily shreds. The internal temperature of the roast should reach at least 145°F (63°C) for medium-rare, but for pot roast it is cooked beyond that for tenderness. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the roast rest in the warm liquid for at least 10 minutes. This allows the juices to redistribute and makes the meat easier to shred.
- Using two forks, shred the beef directly in the slow cooker, mixing it with the peppers and gravy. Serve the shredded beef over steamed white rice, spooning extra gravy on top.
