Tips for success
For the most flavorful result, sear the pork shoulder in a hot skillet with a little oil before adding it to the slow cooker.
This adds a deep, caramelized crust that enhances the overall taste. While the video doesn't show this step, it's a common technique that elevates the dish without adding much time.
If you prefer a thicker gravy, remove the pork after shredding and simmer the remaining liquid on the stovetop or in the slow cooker on HIGH with the lid off for 15 to 20 minutes.
You can also whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water, then cook for a few minutes until thickened.
Variations
- Spicy Pepperoncini: Add 1-2 tablespoons of pepperoncini brine or a chopped fresh jalapeño to the slow cooker for extra heat. You can also use hot pepperoncini if available, or add a pinch of red pepper flakes.
- Smoky Twist: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of liquid smoke to the gravy before pouring it over the roast. This adds a subtle smoky depth that pairs well with the tangy peppers.
- Herb Garden: Stir in 1 tablespoon of chopped fresh oregano or thyme along with the dry mixes. Fresh herbs brighten the dish and add a garden-fresh aroma that complements the rich pork.
- Cheesy Sliders: Top each slider with a slice of provolone or mozzarella and broil for 1-2 minutes until melted. The creamy cheese balances the tang of the pepperoncini and the richness of the gravy.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. The gravy will thicken slightly when cold, so add a splash of broth when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, adding a little beef broth or water to loosen the gravy.
Store leftover pork in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day. Reheat gently in the microwave or on the stovetop with a splash of water or beef broth to keep it moist.
This dish is perfect for meal prep. Cook the pork a day or two ahead, then refrigerate it in the gravy.
When ready to serve, reheat slowly on the stovetop or in the slow cooker on LOW. The pork can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
Serving ideas
Serve the pepperoncini ranch pork shoulder on toasted brioche slider buns for a fun, handheld meal. Add a slice of provolone or pepper jack cheese if you like, and a few extra pepperoncini for a tangy kick.
The pork also shines over mashed potatoes, rice, or egg noodles, with the gravy spooned generously over the top.
For a lighter option, pile the pork onto a bed of crisp lettuce or into corn tortillas with a squeeze of lime. The savory, tangy flavors pair well with cooling toppings like sour cream or a simple slaw. Leftovers make excellent tacos or quesadillas for lunch the next day.

Pepperoncini Ranch Brown Gravy Pork Shoulder

Ingredients
- 4 lb boneless pork shoulder roast (Boston butt)
- 1 oz dry ranch dressing mix
- 1 oz dry au jus gravy mix
- 10 whole pepperoncini peppers
- 1 cup brown gravy (canned or jarred)
- 2 tbsp unsalted butter, cut into pats
Instructions
- Place the pork shoulder roast in the center of a 6- to 7-quart slow cooker. Sprinkle the dry ranch dressing mix and dry au jus gravy mix evenly over the top of the roast. Scatter the whole pepperoncini peppers around and on top of the roast.
- Pour the brown gravy over the roast, letting it flow around the sides. Dot the top of the roast with the pats of unsalted butter.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the pork is fork-tender and shreds easily. The internal temperature should reach at least 145°F (63°C), but for shredding, cook until it reaches 195°F (91°C) for best results. Let it rest for 3 minutes before slicing.
- Remove the roast from the slow cooker and place it on a cutting board. Let it rest for at least 3 minutes. Using two forks, shred the pork into bite-sized pieces, discarding any large pieces of fat. Return the shredded pork to the slow cooker and stir to coat with the gravy.
- Toast the brioche slider buns, if desired. Pile the shredded pork onto the buns and spoon extra gravy over the top. Serve immediately.
