Tips for success
For the best texture, use chicken breasts of similar size so they cook evenly. If using frozen chicken, thaw completely in the refrigerator before cooking.
The cooking times are for fresh, thawed chicken – frozen will need an extra hour or so. Also, if you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking to let some liquid evaporate.
This dish is incredibly versatile. Use it as a filling for tacos, burritos, or quesadillas. Top it with fresh cilantro, diced avocado, or a squeeze of lime juice for extra freshness. The leftovers are great in a salad or as a topping for baked potatoes. The sauce freezes well, so consider making a double batch and freezing half.
Variations
- Chicken Taco Filling: Use this fiesta chicken as a taco filling. Serve in warm corn or flour tortillas with shredded lettuce, diced tomatoes, and a drizzle of sour cream. The creamy, spicy chicken is perfect for tacos.
- Add Black Beans: Stir in a can of drained black beans during the last 30 minutes of cooking. This adds fiber and makes the dish even more filling. The beans soak up the sauce and become creamy and flavorful.
- Use Chicken Thighs: Swap the chicken breasts for boneless, skinless chicken thighs. They are more forgiving and stay moist even if cooked a little longer. The result is even more tender and flavorful.
- Make It Spicier: For more heat, add a diced fresh jalapeño or a teaspoon of chipotle powder. You can also use hot pepper jack cheese or add a splash of hot sauce before serving.

Serving ideas
Serve this fiesta chicken over a bed of fluffy white rice, with the creamy sauce spooned generously over the top. The rice soaks up the sauce beautifully, making each bite satisfying.
For a low-carb option, serve it in lettuce cups or over cauliflower rice. The dish is hearty enough to be a main course, but also works well as a filling for tacos or burritos.
For a fun presentation, serve the chicken in a bowl with tortilla chips on the side for dipping. Add a dollop of sour cream, a sprinkle of fresh cilantro, and a few extra pickled jalapeños for a pop of color and flavor. This is a crowd-pleaser that's easy to serve at parties or family dinners.

Pepper Jack Rotel Jalapeño Fiesta Chicken

Ingredients
- 3 lb boneless skinless chicken breasts
- 1 can (10 oz) fire-roasted diced tomatoes with green chiles
- 1/2 cup sliced pickled jalapeños
- 1 cup warm queso blanco dip
- 1 cup shredded spicy pepper jack cheese
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Pour the fire-roasted diced tomatoes with green chiles and the sliced pickled jalapeños over the chicken, spreading them evenly. Pour the warm queso blanco dip over the top, then sprinkle with the shredded pepper jack cheese. Do not stir.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is cooked through and registers 165°F (74°C) in the thickest part. The cheese will melt into a creamy sauce.
- Using two forks, shred the chicken directly in the slow cooker. Stir the shredded chicken into the sauce so every piece is coated. The sauce will thicken slightly as it mixes with the chicken.
- Let the shredded chicken sit in the sauce on the warm setting for 10 to 15 minutes. This allows the flavors to meld and the sauce to reach the perfect consistency. Stir once more before serving.
- Spoon the fiesta chicken over hot cooked rice or onto a plate with crispy tortilla chips. Garnish with extra pickled jalapeños or a sprinkle of fresh cilantro if desired (not shown in video).
