Tips for success
For the best flavor, use a good-quality queso blanco dip or make your own with white American cheese and milk.
If you prefer a spicier dish, add a few dashes of hot sauce or a minced jalapeño along with the chipotle. To balance the heat, serve with a dollop of sour cream or a sprinkle of fresh cilantro.
This recipe is incredibly versatile. Use the barbacoa as a filling for tacos, burritos, or quesadillas. Serve it over rice, on nachos, or even in a baked potato.
The leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if needed.
Variations
- Chicken Barbacoa: Swap the beef chuck for boneless, skinless chicken thighs. Cook on low for 6 hours or high for 3 hours, until the chicken shreds easily. The internal temperature should reach 165°F (74°C).
- Extra Smoky: Add 1 teaspoon of smoked paprika and a splash of liquid smoke to the slow cooker along with the chipotle. This deepens the smoky flavor and gives the dish a subtle barbecue-like profile.
- Spicy Mango Version: Replace the pineapple tidbits with diced mango and add an extra tablespoon of chopped chipotle. The mango adds a tropical sweetness and a bit of acidity that pairs beautifully with the heat.
- Low-Carb Bowls: Serve the barbacoa over cauliflower rice or in lettuce wraps instead of tortillas or chips. The creamy, spicy sauce is just as delicious without the carbs.

Store any leftover barbacoa in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
Reheat gently on the stovetop or in the microwave, adding a splash of water or broth if the sauce has thickened too much.
You can assemble the raw ingredients in the slow cooker insert the night before and refrigerate it. In the morning, place the insert in the slow cooker base and cook as directed. This is a great make-ahead for busy weeknights or for feeding a crowd on game day.
Serving ideas
Serve the barbacoa hot, straight from the slow cooker.
For a classic presentation, set out a platter of warm tortilla chips, a bowl of the barbacoa, and toppings like shredded lettuce, diced tomatoes, sliced jalapeños, and a squeeze of lime. Let everyone build their own nachos or tacos.
For a heartier meal, serve the barbacoa over steamed rice or alongside Mexican rice and refried beans. The creamy, spicy sauce is also delicious spooned over baked potatoes or sweet potatoes. A simple side salad with a citrus vinaigrette helps cut through the richness.

Pepper Jack Chipotle Pineapple Beef Barbacoa: Slow Cooker

Ingredients
- 2 1/2 lb beef chuck cubes
- 1 cup pineapple tidbits, drained
- 3 tbsp chipotle peppers in adobo sauce, minced
- 1 cup queso blanco dip
- 1 cup shredded pepper jack cheese
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker. Scatter the drained pineapple tidbits over the beef, then add the minced chipotle peppers in adobo. Pour the queso blanco dip over the top, and finish with the shredded pepper jack cheese. Do not stir.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4-5 hours, until the beef is fork-tender and easily shreds. The sauce will be bubbling and the cheeses melted. Let it rest for 3 minutes before slicing.
- Using two forks, shred the beef directly in the slow cooker. Stir the shredded beef into the sauce until well coated. If the sauce seems thin, let it cook uncovered for 15-20 minutes on high to thicken slightly. Let it rest for 3 minutes before slicing.
- Serve the barbacoa warm over tortilla chips, in tacos, or over rice. Garnish with fresh cilantro, diced onions, or a squeeze of lime if desired.
