Tips for success
For the most flavorful results, use a high-quality salsa — look for one with roasted tomatoes and a thick texture. The salsa is the main seasoning, so it should be something you enjoy eating on its own.
If you have time, make a quick homemade salsa by blending canned fire-roasted tomatoes with a little onion, garlic, cilantro, and lime juice. Avoid using watery pico de gallo, as it will make the sauce thin.
To make the dish even heartier, add a drained can of diced green chilies or a chopped bell pepper along with the beans and corn. You can also stir in cooked rice or quinoa after shredding the chicken to stretch the meal further. For a crunchy topping, serve with crushed tortilla chips or a sprinkle of fresh cilantro. The leftovers thicken as they sit, so you may want to add a splash of broth when reheating.
Variations
- Spicy Green Chile Version: Replace the red salsa with a green tomatillo salsa and add a 4-ounce can of diced green chilies. Use pepper jack and a handful of shredded Monterey Jack for a milder, tangier sauce that’s still creamy and delicious.
- Chicken Thigh Swap: Use boneless, skinless chicken thighs instead of breasts for an even juicier result. They can handle the long cooking time without drying out. Shred them as directed — the meat will be incredibly tender and flavorful.
- Veggie-Packed Fiesta: Add a chopped bell pepper, a small diced zucchini, or a cup of frozen peas along with the beans and corn. The extra vegetables add color and nutrition without changing the cooking time. Stir them in with the other ingredients at the start.
- Creamy Ranch Kick: Stir in a packet of ranch dressing mix along with the salsa for a tangy, herby flavor. The ranch powder blends into the sauce and complements the smoky salsa and melted cheese. Use a mild salsa to let the ranch shine.

Serving ideas
Serve this fiesta chicken over steamed white or brown rice, with warm flour tortillas, or as a filling for tacos or burrito bowls. For a low-effort appetizer, pile it onto tortilla chips and top with sliced jalapeños, diced avocado, or a dollop of sour cream. The creamy, spicy sauce is also delicious spooned over baked potatoes or roasted sweet potatoes.
This dish is a complete meal on its own, but you can round it out with a simple green salad dressed with lime vinaigrette or a side of Mexican rice. For a crunchy contrast, serve with tortilla chips for scooping.
Leftovers are great for breakfast — top a fried egg with a scoop of the chicken and cheese mixture for a hearty morning scramble. The possibilities are endless, and every version is just as comforting.

Pepper Jack Black Bean Fiesta Chicken: Easy Crockpot Dinner

Ingredients
- 3 lb boneless skinless chicken breasts
- 2 cans (15 oz each) black beans, rinsed and drained
- 1 1/2 cups frozen fire-roasted corn kernels
- 2 cups chunky roasted red tomato salsa
- 1 cup warm white queso blanco dip
- 1 1/2 cups shredded spicy pepper jack cheese
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Pour the rinsed black beans and frozen corn over the chicken, then spread the salsa evenly over the top. Do not stir — the chicken should stay in contact with the bottom of the pot for even cooking.
- Spoon the warm queso blanco dip over the top of the salsa, then sprinkle the shredded pepper jack cheese evenly over everything. Cover the slow cooker with the lid.
- Set the slow cooker to low and cook for 4 to 5 hours, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) in the thickest part of the breast. Do not lift the lid during the first 3 hours.
- Once the chicken is fully cooked, remove it to a cutting board and let it rest for 5 minutes. Use two forks to shred the meat into bite-size pieces, then return it to the slow cooker and stir everything together with the sauce.
- Stir the shredded chicken into the sauce until well combined. Taste and adjust seasoning if needed — the salsa and cheese may already be salty. Serve hot over tortilla chips, rice, or in warm tortillas.
