Before you start

Start by chilling two tall glasses in the freezer for at least 15 minutes. Wash and dry the raspberries, then set aside a few for garnish. Slice the peaches into thick wedges, dicing a couple of wedges into smaller pieces.

Grate the vanilla bean white chocolate on a box grater into a small bowl. Measure out the ice cream, yogurt, milk, and ice cubes so everything is ready to go when you start blending.

Ingredients at a glance (9)
  • 2 ripe golden peaches, sliced and diced
  • 1 cup fresh raspberries, cleaned
  • 2 oz vanilla bean white chocolate, grated into curls
  • 2 cups vanilla bean ice cream
  • 1/2 cup Greek yogurt
  • 1/2 cup milk
  • 1 cup ice cubes
  • whipped cream, for topping, to taste
  • peach slice, for garnish, to taste

Instructions

Prep the fruit and chocolate

  1. Prep the fruit and chocolate
Slice the ripe golden peaches in half, remove the pits, and cut the flesh into thick wedges, then dice some of the wedges into smaller pieces. Clean the fresh raspberries by gently rinsing them under cold water and patting them dry with a paper towel. Grate the vanilla bean white chocolate on the large holes of a box grater into a fresh pile of curls and set aside.
Look for Peach wedges are thick and juicy; raspberries are dry and whole; white chocolate forms light curls.
Tip Use ripe but firm peaches so they hold their shape in the blender.
  2. Measure and assemble
Measure out the vanilla bean ice cream, Greek yogurt, milk, and ice cubes. Have all the ingredients ready by the blender. Reserve a few peach wedges and raspberries for garnishing the finished smoothie.
Look for All ingredients are within reach, and garnishes are set aside.
Tip Chill the glasses in the freezer while you blend for a frosty finish.

At this stage, the peaches are in thick wedges, the raspberries are clean and dry, and the white chocolate is grated into soft curls. The kitchen smells faintly of vanilla and peach. Check that the chocolate curls are not too large—they should be delicate and airy. The fruit should be ready to go into the blender without any stems or pits.

Blend the smoothie

  1. Blend the smoothie
Add the peach wedges, vanilla bean ice cream, Greek yogurt, milk, and ice cubes into a glass blender pitcher. Lock the lid securely in place. Blend on high until the mixture is thick and swirling, stopping to scrape down the sides if needed. Continue blending until completely smooth and velvety.
Look for The smoothie is thick, pastel gold, and moves in a slow swirl when the blender stops.
Tip If the smoothie is too thick, add a splash more milk; if too thin, add a few more ice cubes.

The blender is running, and the ingredients are slowly turning into a thick, swirling mass. The color is a soft pastel gold, and the sound changes from loud to a lower, smoother hum as the mixture becomes creamy. Stop and scrape down the sides to ensure everything is incorporated. The smoothie should be thick enough to hold a swirl pattern when the blender stops.

Pour and garnish

  1. Pour and garnish
Pour the thick velvety smoothie from the blender pitcher into a crystal glass or tall serving glasses. Finish each glass with a generous swirl of whipped cream, a scattering of fresh raspberries, and a peach slice on the rim. Sprinkle the vanilla white chocolate curls over the top just before serving.
Look for The smoothie is topped with whipped cream, raspberries, a peach slice, and chocolate curls.
Tip Add the chocolate curls last so they stay crisp and visible.

The smoothie is poured into the chilled glasses, leaving a little room for the toppings. The whipped cream sits in a soft cloud, raspberries are scattered on top, and a peach slice rests on the rim.

The vanilla white chocolate curls are sprinkled over the cream, adding a final touch of elegance. The glass looks inviting, with layers of golden smoothie, white cream, and bright red berries.

Common mistakes

One common mistake is over-blending the raspberries, which can make the smoothie seedy and turn it pink rather than golden. Blend just until the raspberries are broken up but still visible as small flecks.

Another mistake is using under-ripe peaches, which are hard and lack sweetness; taste a wedge first and add a little honey or maple syrup if needed. Also, avoid adding too much ice, which can dilute the flavor and make the smoothie watery.

How to tell it’s done

The smoothie is done when it is completely smooth, thick, and has a pastel gold color. It should move slowly when the blender is off, and when poured, it should mound slightly in the glass rather than being watery.

If the smoothie is too thick to pour, add extra milk a tablespoon at a time. If it is too thin, add more ice cubes and blend again. The ideal consistency is like a thick milkshake.
