Before you start
Before starting, make sure the chicken thighs are thawed if they were frozen. Slice fresh peaches, if using, into thick wedges. Measure the BBQ sauce. Have a 6-quart slow cooker ready. No other prep is needed — this is a true dump-and-go recipe.
Ingredients at a glance (3)
- 6 boneless skinless chicken thighs
- 4 cups sliced freestone peaches (fresh or frozen, thawed)
- 1 1/2 cups hickory brown-sugar BBQ sauce
Instructions
Layer and Walk Away
- Layer the IngredientsPlace the chicken thighs in an even layer in the bottom of a 6-quart slow cooker. Scatter the sliced peaches over the chicken. Pour the hickory BBQ sauce over everything, making sure the chicken and peaches are mostly coated.Look for The chicken thighs should be nestled in the sauce, with peaches scattered on top and sauce drizzled over all.Tip No need to stir at this stage — the slow cooker will blend the flavors as it cooks.
At the start, you'll see the raw chicken thighs nestled in a pool of BBQ sauce, with peach slices scattered on top. The sauce will look thick and glossy, and the peaches will be bright and firm.
This is the 'before' picture — the slow cooker will transform these simple ingredients into a rich, caramelized dish.
Slow-Cooked Tender
- Slow Cook Until TenderCover the slow cooker and cook on LOW for 5 to 6 hours, or on HIGH for 3 to 4 hours, until the chicken is tender and easily pulls apart with a fork. The sauce should be bubbling gently around the edges.Look for The chicken will be fall-apart tender, and the sauce will have thickened and turned a deep mahogany color.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Resist the urge to lift the lid during cooking — each peek adds 20 minutes of cook time.
After several hours, the kitchen will smell of sweet peaches and smoky hickory. The sauce will have darkened to a deep mahogany and be gently bubbling.
The chicken should be fork-tender — test by inserting a fork and twisting; it should shred easily. The peaches will have softened into jammy pieces.
Shred and Glaze
- Shred and ServeUsing two forks, shred the chicken thighs directly in the slow cooker, mixing them with the softened peaches and sauce. Stir well to coat everything in the glaze. Serve hot over steamed jasmine rice, spooning extra sauce over the top.Look for The chicken should shred easily and be coated in a glossy, sticky-sweet BBQ glaze.Tip For extra caramelization, transfer the shredded mixture to a baking sheet and broil for 2–3 minutes, watching closely.
Once shredded and stirred, the chicken will be coated in a sticky, glossy glaze that clings to every piece. The peaches will have mostly melted into the sauce, leaving sweet, fruity bits throughout. The dish should look caramelized and inviting, with a deep brown color and a shiny finish.
Common mistakes
A common mistake is lifting the lid to check on the food — this lets out heat and extends cooking time. Another is using chicken breasts instead of thighs; breasts dry out in the slow cooker.
Be sure to use ripe peaches; underripe ones won't soften properly and will taste tart. Finally, don't skip shredding the chicken in the sauce; this allows the meat to absorb the glaze and become even more flavorful.
How to tell it’s done
The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce should be thick, glossy, and bubbling gently around the edges.
The peaches should be soft and translucent, having melted into the sauce. If the sauce seems thin, remove the chicken and simmer it on the stovetop for a few minutes to reduce.
- Poultry: 165°F (74°C) in the thickest part
