Before you start
Before starting, cut the chicken into bite-sized cubes and have all ingredients ready. No need to pre-cook anything—this is a true dump-and-go meal.
If using fresh ravioli, keep them refrigerated until ready to use. If using frozen, there is no need to thaw. Measure out the sauce and cheeses so everything is within reach.
Ingredients at a glance (5)
- 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
- 20 oz jumbo four-cheese ravioli (fresh or frozen)
- 24 oz vodka sauce
- 1 1/2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
Layer and Top
- Layer the Chicken and RavioliPlace the cubed chicken breasts in an even layer in the bottom of a 6-quart slow cooker. Spread the jumbo four-cheese ravioli over the chicken, making sure they are mostly in a single layer. Pour the vodka sauce over the top, covering the ravioli and chicken as evenly as possible.Look for The chicken and ravioli should be coated with sauce, with some sauce pooling around the edges.Tip If using frozen ravioli, there is no need to thaw them first—they will cook perfectly in the slow cooker.
- Top with CheesesSprinkle the shredded Italian four-cheese blend evenly over the sauce, followed by the freshly grated Parmigiano-Reggiano. Do not stir—the cheese layer will melt into a golden crust as it cooks.Look for The top should be fully covered with the two cheeses.Tip Grating the Parmesan fresh gives the best flavor and meltability.
At the end of this phase, the slow cooker contains a neat layering of chicken, ravioli, vodka sauce, and a generous blanket of cheese. The sauce should cover the pasta and chicken, and the cheese should be evenly spread. This is the starting point for the slow cooking process.
Slow Cook
- Slow Cook Until TenderCover the slow cooker and cook on LOW for 3 to 4 hours, or on HIGH for 1 1/2 to 2 hours, until the chicken is cooked through and the ravioli are tender. The chicken is done when it reaches an internal temperature of 165°F (74°C).Look for The sauce should be bubbling gently around the edges, and the cheese on top should be melted and lightly golden.Safe temperature 165°F (74°C) internal temperature (poultry)Tip Check the chicken temperature with an instant-read thermometer in the thickest piece.
After several hours on low, the sauce is bubbling gently, the cheese has melted into a golden, bubbly crust, and the aroma of tomato, cream, and cheese fills the kitchen.
The chicken is cooked through and tender, and the ravioli are soft but intact. The dish is ready to be served.
Serve
- Serve and EnjoyOnce cooked, turn off the slow cooker. Use a large spoon to gently stir the mixture, being careful not to break the ravioli. Serve hot directly from the slow cooker or transfer to a serving dish. Garnish with extra Parmesan if desired.Look for The cheese should stretch as you scoop, and the sauce should be creamy and thick.Tip For a crispier top, place the slow cooker insert under the broiler for 2–3 minutes after cooking, if your insert is broiler-safe.
When you lift the lid, steam rises and the cheese stretches as you scoop. The ravioli are coated in a creamy, pink sauce, and the chicken is juicy. The dish looks like a rustic, comforting casserole, ready to be plated and enjoyed.
Common mistakes
One common mistake is overcooking the ravioli, which can make them mushy. Stick to the recommended cooking time and check early. Another is using a low-quality vodka sauce that is too watery—look for a thick, creamy sauce.
Avoid stirring during cooking, as this can break the ravioli and disrupt the cheese crust. Finally, ensure the chicken is cut into even cubes so it cooks uniformly.
How to tell it’s done
The dish is done when the chicken reaches an internal temperature of 165°F (74°C) and the ravioli are tender but still hold their shape.
The sauce should be bubbling and slightly thickened, and the cheese on top should be melted and lightly golden. If using frozen ravioli, they may need the longer end of the cooking time.
- Poultry: 165°F (74°C) in the thickest part
