Before you start
Before starting, chill the coconut cream if using a can (the solid part will be easier to measure). Wash and dry the papaya, pineapple, and passion fruit.
Have a box grater ready for the chocolate. If using fresh passion fruit, cut it in half and scoop out the pulp with a spoon. Measure all ingredients and have the blender pitcher ready to go.
Ingredients at a glance (6)
- 1 ripe papaya, seeded and diced
- 1/2 cup passion fruit pulp (fresh or frozen)
- 1 cup pineapple chunks
- 1 cup ice cubes
- 1/2 cup coconut cream
- 2 oz vanilla white chocolate, grated into curls
Instructions
Prep and Blend
- Prepare the fruit and chocolateSlice the papaya in half lengthwise and scoop out the black seeds with a spoon. Dice the orange flesh into bite-size pieces. Grate the vanilla white chocolate on a box grater into a small pile of curls.Look for The papaya is diced into even cubes, and the chocolate forms light, airy curls.Tip Chill the chocolate before grating for cleaner curls that don't melt from the warmth of your hands.
- Add ingredients to blenderPlace the diced papaya, passion fruit pulp, pineapple chunks, ice, and coconut cream into a blender pitcher. Do not add the chocolate curls yet.Look for The pitcher is filled with vibrant orange and yellow fruit, ice, and creamy coconut.Tip If using fresh passion fruit, strain the pulp to remove seeds for a smoother texture, or leave them for a crunchy contrast.
- Blend until smoothLock the lid securely and blend on high speed until the mixture is completely smooth and thick. Stop and scrape down the sides if needed, then blend again briefly.Look for The mixture becomes a thick, swirling smoothie with a consistent orange color.Tip Start on low speed to break up the ice, then increase to high for a silky texture.
At the end of this phase, the fruit is prepped and the smoothie is blended to a thick, smooth consistency. The mixture should be a uniform orange color, with no large pieces of fruit or ice remaining. It should be thick enough to coat the back of a spoon.
Assemble and Garnish
- Pour into glassesPour the smoothie into tall glasses, dividing it evenly between them. The smoothie should be thick enough to hold its shape.Look for The smoothie fills the glasses with a vibrant orange color and a creamy consistency.Tip Use a spatula to scrape every last bit from the blender for no waste.
- Drizzle with coconut creamDrizzle the top of each smoothie with extra coconut cream, letting it swirl into the surface for a marbled look.Look for The coconut cream forms white ribbons against the orange smoothie.Tip Use a spoon to drizzle the cream slowly for distinct swirls.
The smoothie is poured into glasses and topped with a drizzle of coconut cream and a sprinkle of vanilla white chocolate curls. The presentation should show a distinct contrast between the orange smoothie, white cream swirls, and chocolate curls.
Serve
- Top with chocolate curlsFinish with a generous sprinkle of the vanilla white chocolate curls over the coconut cream drizzle. Serve immediately.Look for The chocolate curls sit atop the cream, adding a contrasting white and creamy touch.Tip Add the chocolate curls just before serving so they stay crisp and don't melt into the smoothie.
The smoothie is served immediately, with the chocolate curls still crisp and the cream swirls intact.
Each sip should deliver a balance of tropical fruit flavors and creamy richness. Take a moment to check the color, texture and aroma before you move on to the next step.
Common mistakes
Avoid over-blending, which can make the smoothie too thin and watery. Start with less ice and add more only if needed. If the smoothie is too thick, add a splash of coconut water or regular water to thin it.
If it's too thin, add more frozen fruit or ice. Be careful when grating the chocolate—use a box grater and watch your fingers.
How to tell it’s done
The smoothie is done when it is completely smooth and thick, with no visible chunks of fruit or ice. It should pour slowly from the blender and hold a slight mound when spooned.
The color should be a vibrant orange, and the aroma should be intensely tropical. Taste and adjust sweetness if needed, but the natural fruit sugars should be sufficient.
