Tips for success
For the best texture, use a cabbage with large, pliable leaves — savoy cabbage also works well if that is what is available.
When packing the filling into the bowl, press it down firmly so the parcel holds its shape after baking. If the leaves tear, simply patch them with a smaller piece of cabbage before folding.
The garlic yogurt can be made up to a day ahead and kept refrigerated. For a thinner sauce, whisk in a tablespoon of water or olive oil.
To make the dish spicier, add a pinch of red pepper flakes to the filling. Leftover parcels keep well and taste even better the next day.
Variations
- Lamb and Mint: Replace the ground beef with ground lamb and add an extra teaspoon of dried mint. The lamb’s richness pairs beautifully with the garlic yogurt and tomato broth.
- Spicy Harissa: Stir 1 tablespoon of harissa paste into the filling for a smoky, spicy kick. Reduce the pepper paste to 1/2 tablespoon to keep the balance.
- Vegetarian: Swap the beef for 1 1/2 cups cooked lentils and add a grated carrot for moisture. Increase the cumin and mint to keep the filling flavorful.
- Lemon-Herb: Add the zest of one lemon and 2 tablespoons of chopped fresh parsley to the filling. Serve with an extra squeeze of lemon over the yogurt.
Storage and make-ahead
- Fridge
- Store leftover parcels in an airtight container in the refrigerator for up to 3 days. Keep yogurt separate.
- Freezer
- Freeze baked parcels in a single layer for up to 2 months. Thaw overnight in the refrigerator.
- Reheat
- Reheat in a 350°F (175°C) oven for 15-20 minutes until hot. Add a splash of broth if dry.
Leftover cabbage parcels can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave until piping hot. The garlic yogurt should be stored separately and added fresh when serving.
Assemble the parcels up to a day ahead, but do not pour the broth over them until ready to bake. Cover and refrigerate the dish and the broth separately.
When ready to cook, pour the hot broth over the parcels and bake as directed, adding 10 minutes to the cooking time if starting from cold.
Serving ideas
Serve the cabbage parcels hot from the oven, placed on a thick bed of cold garlic yogurt. The contrast between the warm, savory parcel and the cool, tangy yogurt is the signature of this dish.
For a complete meal, add a simple green salad or some crusty bread to soak up the extra broth.
To eat, slice the parcel open with a knife and fork, letting the filling steam out. The tender cabbage, juicy beef, and creamy yogurt come together in every bite. This is a dish that feels special enough for company but simple enough for a weeknight.

Over Creamy Garlic Yogurt Cabbage Parcels

Ingredients
- 1 large head white cabbage
- 300 g ground beef
- 1 1/2 cups rinsed white rice
- 1 grated onion
- 1 tbsp tomato paste
- 1 tbsp pepper paste
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried mint
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 1/2 cups hot tomato broth
- 2 tbsp olive oil
- 1 cup cold garlic yogurt
Instructions
- Bring a large pot of salted water to a rolling boil. Carefully add the whole cabbage leaves and blanch for 3 minutes until tender and pliable. Using tongs, transfer the leaves to a bowl of ice water to stop the cooking, then shake off excess moisture and set aside.
- In a large bowl, combine the ground beef, rinsed white rice, grated onion, tomato paste, pepper paste, minced garlic, olive oil, dried mint, ground cumin, salt, and black pepper. Mix with your hands or a wooden spoon until everything is evenly distributed.
- Line a ribbed glass dessert bowl with a softened cabbage leaf, letting the edges overhang. Press the leaf into the bowl so it covers the bottom and sides completely, leaving no gaps.
- Spoon the beef and rice filling into the cabbage-lined bowl, pressing it down firmly so the cup is packed tightly. Fold the overhanging cabbage leaves inward over the top, covering the filling completely.
- Place a round baking dish over the bowl and carefully invert the whole thing, turning the cabbage parcel out into the dish. The seam side should be down.
- Whisk the hot tomato broth with the olive oil, then pour it over and around the cabbage parcel. Cover the dish with a lid or aluminum foil.
- Bake at 190°C (375°F) for 45 minutes, covered, until the cabbage is very tender and the filling is cooked through. Remove the cover for the last 10 minutes to let the top caramelize slightly.
- Spoon a generous layer of cold garlic yogurt onto each plate. Carefully place a roasted cabbage parcel on top of the yogurt, then slice it open with a knife and fork to reveal the steaming spiced beef and rice filling.
