Before you start

Before starting, bring a large pot of salted water to a boil and prepare a bowl of ice water. Grate the onion and mince the garlic. Rinse the rice under cold water until the water runs clear.

Have the tomato broth hot and ready, mixed with olive oil. Set out the baking dish and the ribbed glass bowl. The oven should be preheated to 190°C (375°F).

Ingredients at a glance (15)
  • 1 large head white cabbage
  • 300 g ground beef
  • 1 1/2 cups rinsed white rice
  • 1 grated onion
  • 1 tbsp tomato paste
  • 1 tbsp pepper paste
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried mint
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 cups hot tomato broth
  • 2 tbsp olive oil
  • 1 cup cold garlic yogurt

Instructions

Prep and Blanch

  1. Blanch the Cabbage Leaves
Bring a large pot of salted water to a rolling boil. Carefully add the whole cabbage leaves and blanch for 3 minutes until tender and pliable. Using tongs, transfer the leaves to a bowl of ice water to stop the cooking, then shake off excess moisture and set aside.
Look for Leaves are bright green, flexible, and easy to fold without tearing.
Tip Keep the largest leaves for the outer wrap and use smaller ones for patching.
  2. Make the Spiced Beef and Rice Filling
In a large bowl, combine the ground beef, rinsed white rice, grated onion, tomato paste, pepper paste, minced garlic, olive oil, dried mint, ground cumin, salt, and black pepper. Mix with your hands or a wooden spoon until everything is evenly distributed.
Look for The filling looks uniformly seasoned and slightly sticky from the onion.
Tip Grating the onion releases moisture that keeps the filling juicy.

The cabbage leaves should be bright green, flexible, and cool enough to handle. The filling should be evenly mixed and smell aromatic with mint and cumin. At this point, the oven is preheated and the baking dish is ready.

Assemble and Bake

  1. Line the Bowl with Cabbage Leaves
Line a ribbed glass dessert bowl with a softened cabbage leaf, letting the edges overhang. Press the leaf into the bowl so it covers the bottom and sides completely, leaving no gaps.
Look for The leaf clings to the bowl and forms a smooth cup.
Tip If the leaf is too small, overlap two leaves to cover the bowl.
  2. Pack the Filling into the Bowl
Spoon the beef and rice filling into the cabbage-lined bowl, pressing it down firmly so the cup is packed tightly. Fold the overhanging cabbage leaves inward over the top, covering the filling completely.
Look for The filling is compact and the cabbage folds meet in the center.
Tip Packing tightly ensures the parcel holds its shape after baking.
  3. Invert the Parcel into the Baking Dish
Place a round baking dish over the bowl and carefully invert the whole thing, turning the cabbage parcel out into the dish. The seam side should be down.
Look for The parcel releases cleanly and sits upright in the dish.
Tip Give the bowl a gentle shake before inverting to loosen the parcel.
  4. Pour Over the Tomato Broth
Whisk the hot tomato broth with the olive oil, then pour it over and around the cabbage parcel. Cover the dish with a lid or aluminum foil.
Look for The broth pools around the parcel, coming about halfway up the sides.
Tip Use hot broth so the baking time stays accurate.
  5. Bake Until Tender and Caramelized
Bake at 190°C (375°F) for 45 minutes, covered, until the cabbage is very tender and the filling is cooked through. Remove the cover for the last 10 minutes to let the top caramelize slightly.
Look for The broth is bubbling, the cabbage is deeply golden at the edges, and the kitchen smells savory.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip If the dish looks dry, add a splash of hot water or extra broth.

The parcel should be neatly wrapped, with the seam side down in the baking dish. The broth should come about halfway up the sides.

During baking, the kitchen will fill with the scent of tomatoes and spices. The cabbage will shrink slightly as it cooks.

Serve Over Yogurt

  1. Serve Over Cold Garlic Yogurt
Spoon a generous layer of cold garlic yogurt onto each plate. Carefully place a roasted cabbage parcel on top of the yogurt, then slice it open with a knife and fork to reveal the steaming spiced beef and rice filling.
Look for The parcel cuts cleanly and steam rises from the juicy filling.
Tip The cold yogurt contrasts with the hot filling for a bright, creamy bite.

The parcel should be deeply golden at the edges, and the filling should be steaming when sliced. The cold yogurt should be thick and spoonable. Each plate gets a generous swoosh of yogurt, with the hot parcel placed right on top.

Common mistakes

One common mistake is undercooking the cabbage leaves, making them stiff and prone to tearing when folded. Blanch for a full 3 minutes and cool them completely in ice water.

Another is overfilling the bowl — leave enough leaf to fold over the top. Finally, do not skip the cold yogurt; it balances the rich, savory filling and adds a creamy finish.

How to tell it’s done

The parcels are done when the cabbage is very tender and easily pierced with a knife, and the filling reaches a safe internal temperature of 160°F (71°C).

The top should be lightly caramelized and the broth bubbling. Let the dish rest for 5 minutes before serving so the juices settle and the parcels hold their shape when sliced.

  • Ground meat: 160°F (71°C) in the thickest part
