Tips for success
For the best texture, use freshly grated mozzarella rather than pre-shredded, which often contains anti-caking agents that prevent smooth melting.
Grating your own from a block takes just a minute and makes a noticeable difference. If you prefer a stronger cheese flavor, substitute half of the mozzarella with provolone or fontina.
To make the dish even more convenient, prepare the meatballs up to a day ahead and keep them covered in the refrigerator.
When ready to cook, sear them directly from the fridge; you may need to add a minute to the cooking time. The recipe also works well with ground turkey or chicken — just ensure the internal temperature reaches 165°F (74°C).
Variations
- Spicy Arrabbiata: Add 1/2 teaspoon of red pepper flakes along with the Italian herbs for a spicy kick. Use a spicy tomato sauce or add a pinch of cayenne. Garnish with extra black pepper and fresh basil instead of parsley.
- Vegetarian Mushroom: Replace the ground beef with finely chopped mushrooms and an extra 1/4 cup of breadcrumbs to bind. Sauté the mushrooms with the onion and garlic before adding the pasta and sauce. Omit the meatballs and cook the pasta directly in the sauce.
- Cheesy Meatball Sub: Serve the meatball pasta on toasted sub rolls, spooning the meatballs and sauce over the bread and topping with extra mozzarella. Broil for 2 minutes until bubbly. This turns the dish into a sandwich for a fun dinner twist.
- Herb and Ricotta Swirl: Fold in 1/2 cup of whole-milk ricotta along with the mozzarella for a creamier, richer sauce. Add 1 tablespoon of chopped fresh basil and oregano along with the parsley. The ricotta adds a velvety texture and a slight tang.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days. Add a splash of water when reheating to restore the sauce consistency.
- Freezer
- Freeze the cooked pasta in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little water or broth if the pasta seems dry.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce, so add a splash of water or broth when reheating to restore a saucy consistency.
Reheat gently on the stovetop or in the microwave, stirring occasionally, until heated through.
You can shape the meatballs up to 24 hours in advance and keep them covered in the refrigerator. The entire dish can also be cooked ahead and refrigerated; reheat gently with a little extra water or sauce. For longer storage, freeze the cooked pasta in an airtight container for up to 3 months.
Serving ideas
Serve the one-pot meatball pasta in deep bowls, with a generous ladle of sauce and a sprinkle of fresh parsley. A side of crusty bread is perfect for sopping up any remaining sauce. For a complete meal, add a simple green salad with a lemon vinaigrette to balance the richness of the dish.
This pasta is hearty enough to stand alone as a main course. If you like, top each serving with a few extra shavings of Parmesan or a drizzle of olive oil.
The leftovers taste even better the next day, once the flavors have melded. Pair with a light red wine like Chianti or a sparkling water with lemon for a refreshing contrast.

One-Pot Meatball Pasta with Mozzarella

Ingredients
- 1/2 lb ground beef
- 1/4 cup grated onion
- 1/4 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried Italian herbs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 8 oz penne pasta
- 2 cups tomato sauce
- 1 cup water
- 1 cup shredded mozzarella cheese
- 2 tbsp fresh parsley, chopped
Instructions
- In a medium bowl, combine the ground beef, grated onion, breadcrumbs, egg, minced garlic, Italian herbs, salt, and black pepper. Mix gently with your hands or a fork until just combined; do not overwork. Shape the mixture into 12 to 16 mini meatballs, about 1 inch in diameter.
- Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the meatballs in a single layer (work in batches if needed) and cook until browned on all sides, about 3 to 4 minutes total. Use a spoon to turn them gently. They do not need to be cooked through at this point.
- Add the penne pasta, tomato sauce, and water to the pot with the meatballs. Stir gently to combine, scraping up any browned bits from the bottom. Bring the liquid to a simmer over medium heat.
- Cover the pot with a lid and reduce the heat to medium-low. Simmer for about 12 minutes, stirring once halfway through, until the pasta is tender and has absorbed most of the sauce. The meatballs should be cooked through.
- Remove the pot from the heat. Sprinkle the shredded mozzarella over the pasta and stir gently until the cheese is melted and creamy. The residual heat will melt the cheese without overcooking the pasta.
- Spoon the pasta and meatballs into serving bowls. Garnish with chopped fresh parsley and a crack of black pepper. Serve hot.
