Tips for success

To enhance the flavor profile, consider lightly sautéing the onion, bell pepper, and celery in a skillet with a small amount of oil before adding them to the slow cooker.

This extra step caramelizes the vegetables slightly, deepening the base flavor of the soup and providing a more complex, savory foundation that slow cooking alone cannot always achieve.

If you prefer a thicker consistency, you can mash a few of the cooked vegetables against the side of the pot once the cooking is complete.

This releases natural starches into the broth, creating a heartier, more stew-like texture. Alternatively, if the soup is too thick, simply stir in an additional half-cup of chicken broth until you reach your desired consistency.

Variations

  • Spicy Cajun Heat: Add a tablespoon of cayenne pepper or finely diced jalapeños during the initial layering phase to significantly increase the heat level for those who prefer a spicier, more traditional Cajun-style kick.
  • Vegetable-Forward: Incorporate extra vegetables like sliced okra or diced carrots during the first phase of cooking. Okra also acts as a natural thickener, giving the soup a more authentic, hearty texture.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in freezer-safe bags for up to 2 months; thaw in the refrigerator before reheating.
Reheat
Reheat on the stovetop over medium-low heat until steaming hot throughout.

Allow any leftovers to cool to room temperature for no more than two hours before transferring them to airtight containers. Properly stored, the soup will maintain its quality in the refrigerator for up to three days.

When reheating, ensure the soup reaches a steady simmer to guarantee the shrimp are warmed through safely without being subjected to excessive heat for too long.

You can prepare the Holy Trinity vegetables and measure your spices the night before to streamline your morning assembly. Keep the vegetables in an airtight container in the refrigerator until you are ready to start the slow cooker.

While you can assemble the pot early, it is best to add the liquid just before turning it on to keep the vegetables crisp and fresh until the cooking process begins.

Serving ideas

Serve this jambalaya soup in deep, warmed stoneware bowls to help retain its heat as you eat. A generous garnish of freshly sliced green onions and chopped parsley adds a necessary pop of brightness and freshness that cuts through the richness of the smoky sausage and Creole spices, balancing each bite perfectly.

For those who enjoy an extra kick of heat, provide a bottle of high-quality hot sauce on the side. A small dash directly into the bowl just before serving allows each person to customize the spice level to their preference. Pair the soup with a side of crusty French bread or cornbread to mop up the flavorful, seasoned broth.

Frequently asked questions

Can this be made ahead and frozen?
Yes, this soup freezes very well. Once cooked, allow it to cool completely before portioning into freezer-safe containers. Note that the rice may soften further upon reheating, so some prefer to freeze the soup base and add fresh rice when serving.
Why is it important to add the shrimp at the very end?
Shrimp are delicate proteins that cook in minutes. If they were added at the start of the 5-hour cooking cycle, they would become extremely tough, rubbery, and lose their natural sweetness, ruining the texture of the dish.
Is raw rice suitable for the slow cooker?
It is not recommended. Raw rice requires specific liquid ratios and cooking times that do not align with the slow-cooking process of the other ingredients. Adding pre-cooked rice at the end ensures the perfect texture without the risk of the rice turning into mush.

A steaming bowl of Creole jambalaya soup filled with shrimp, chicken, and sausage, garnished with green onions.

Ingredients

  • 1 lb boneless chicken thighs
  • 1 lb smoked andouille sausage, sliced
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 stalks celery, diced
  • 28 oz crushed tomatoes
  • 2 tbsp Creole seasoning
  • 4 cups chicken broth
  • 1 lb peeled jumbo Gulf shrimp
  • 1.5 cups cooked long-grain rice

Instructions

  1. Place the chicken thighs, sliced andouille sausage, diced onion, green bell pepper, and celery into the slow cooker. Add the crushed tomatoes, Creole seasoning, and chicken broth on top.
  2. Cover and cook on the LOW setting for 5 hours. This slow process allows the chicken to become tender and the flavors of the Creole seasoning to fully penetrate the meat and vegetables.
