Tips for success
For the best flavor, use high-quality extra virgin olive oil, as it is a key ingredient in this dish. Heat the oil until it shimmers but doesn't smoke, which ensures the garlic and chili flakes infuse without burning.
When adding the pasta water, do it gradually—you can always add more, but you can't take it away. The goal is a sauce that coats the pasta lightly, not a soupy mixture.
Feel free to customize the heat level by adjusting the chili flakes, or add a pinch of dried oregano for an herby note. If you have leftover grilled or roasted vegetables, they can be added in place of the sautéed zucchini.
For a more substantial meal, toss in some cooked chicken or shrimp, though this will change the nutritional profile and cooking time. Always taste before serving and adjust seasoning with salt and pepper.
Variations
- Add Protein: For a heartier meal, add grilled chicken breast, sautéed shrimp, or crumbled Italian sausage. Cook the protein separately and toss it with the pasta at the end, or cook it in the same skillet before adding the vegetables.
- Make It Spicy: Increase the red chili flakes to 1 teaspoon or add a pinch of cayenne pepper for extra heat. You can also stir in a spoonful of Calabrian chili paste along with the garlic for a deeper, spicier flavor.
- Vegetable Boost: Add a handful of baby spinach or chopped kale along with the tomatoes, letting it wilt into the sauce. Roasted red peppers, artichoke hearts, or olives also make excellent additions for extra texture and flavor.
- Creamy Version: For a creamier sauce, stir in 2 tablespoons of heavy cream or a dollop of mascarpone after adding the pasta water. This adds richness without overwhelming the fresh vegetable flavors.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or olive oil.
- Freezer
- Freezing is not recommended, as the texture of the zucchini and pasta will become mushy upon thawing.
- Reheat
- Reheat in a skillet over medium heat with a splash of water or olive oil, stirring until heated through.
Leftover pasta can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place it in a skillet with a splash of water or olive oil over medium heat, stirring occasionally, until heated through.
The sauce may thicken upon cooling; add a little water or broth to loosen it if needed. Avoid microwaving the pasta for too long, as it can become rubbery.
The components can be prepared ahead of time: slice the zucchini, mince the garlic, and wash and halve the tomatoes. Store them separately in the refrigerator for up to 2 days.
Cook the pasta just before serving, as it tends to absorb sauce and become mushy when stored. The sauce can be made a day ahead and refrigerated; reheat it gently and toss with freshly cooked pasta.
Serving ideas
Serve this pasta as a main course with a simple green salad and crusty bread for a complete meal. It also works well as a side dish alongside grilled chicken or fish. For a vegetarian feast, pair it with a caprese salad or roasted vegetables. The dish is best enjoyed immediately, when the sauce is glossy and the pasta is perfectly tender.
Garnish each bowl with extra grated parmesan, a drizzle of olive oil, and a few whole basil leaves for a beautiful presentation. A sprinkle of flaky sea salt and cracked black pepper adds a final touch of flavor. This pasta is also delicious served at room temperature as a pasta salad, making it a versatile option for picnics or potlucks.

One-Pan Zucchini And Tomato Pasta Ready In 15 Minutes

Ingredients
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 tsp red chili flakes
- 2 medium zucchini, thinly sliced into coins
- 2 cups cherry tomatoes
- 12 oz short pasta, such as penne or fusilli
- 1/2 cup starchy pasta water
- 1/2 cup freshly grated parmesan cheese
- 1/4 cup fresh basil leaves, torn
Instructions
- Heat 3 tablespoons of extra virgin olive oil in a large skillet over medium-high heat. Add the minced garlic, red chili flakes, and thinly sliced zucchini coins. Cook, stirring occasionally, for about 3 to 4 minutes, until the zucchini is tender and lightly golden on the edges. Season with a pinch of salt if desired.
- Add the cherry tomatoes to the skillet. Stir to combine, then cover with a lid and reduce the heat to medium. Cook for about 5 minutes, until the tomatoes burst and release their juices. Uncover and gently crush the tomatoes with the back of a spoon to create a glossy sauce.
- Add the cooked al dente pasta directly to the skillet along with the starchy pasta water. Toss everything together with a wooden spoon or tongs, scraping up any browned bits from the bottom of the pan. The pasta water will help the sauce cling to the noodles.
- Turn off the heat. Add the freshly grated parmesan cheese and torn basil leaves to the skillet. Toss well until the cheese melts and creates a creamy, glossy sauce. Taste and adjust seasoning with salt and pepper if needed.
- Spoon the pasta into warm bowls. Shower with additional grated parmesan cheese and drizzle with a little extra virgin olive oil. Garnish with a few whole basil leaves if desired. Serve immediately.
