Tips for success
For the best texture, cook the spaghetti just shy of al dente—it will finish cooking in the sauce.
Reserve a cup of pasta water before draining; if the sauce seems too thick, add a splash to loosen it. Tossing the pasta in the sauce over low heat helps it absorb flavor without overcooking.
When searing the tomatoes, let them sit undisturbed for a minute to develop a nice char. This adds a smoky depth to the sauce.
If the skillet gets too dry, add a splash of water or olive oil. Use a spatula to scrape up any browned bits from the bottom—they're packed with flavor.
Variations
- Spicy Arrabbiata Twist: Add 1/2 teaspoon red pepper flakes along with the paprika for a spicy kick. Finish with a drizzle of chili oil for extra heat and depth.
- Mushroom Bolognese: Sauté 8 oz sliced mushrooms with the beef until browned and tender. The mushrooms add an earthy flavor and meaty texture, making the dish even more satisfying.
- Herb-Infused Version: Stir in 1 teaspoon dried oregano and 1 teaspoon dried thyme along with the spices. Garnish with fresh parsley instead of basil for a different herbal note.
- Cheesy Baked Spaghetti: After tossing the spaghetti with the sauce, transfer to a baking dish, top with mozzarella and Parmesan, and bake at 375°F (190°C) for 15 minutes until bubbly and golden.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or broth to loosen the sauce.
- Freezer
- Freeze the sauce (without pasta) in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat, adding a splash of water or broth to restore the sauce's consistency.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some sauce, so when reheating, add a splash of water or broth to bring back its saucy texture.
Reheat gently on the stovetop or in the microwave, stirring occasionally, until piping hot.
The sauce can be made ahead and stored in the refrigerator for up to 3 days, or frozen for up to 3 months. Cook the spaghetti fresh when ready to serve, or toss the sauce with freshly cooked pasta. Reheat the sauce gently and combine with the pasta just before serving.
Serving ideas
Serve the spaghetti hot, twirled into nests in shallow bowls. Shower generously with freshly grated Parmesan and scatter fresh basil leaves on top.
A drizzle of extra virgin olive oil just before serving adds a luxurious finish. Pair with a simple green salad and crusty bread to complete the meal.
For a heartier meal, serve the spaghetti with garlic bread or a side of roasted vegetables. The leftovers are excellent cold, tossed with a little olive oil and lemon juice for a pasta salad. This dish is best enjoyed immediately, but it also makes a satisfying next-day lunch.

One-Pan Tomato Beef Spaghetti with Parmesan

Ingredients
- 3 tbsp extra virgin olive oil
- 5 whole ripe red vine tomatoes
- 300 g ground beef
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp sweet paprika
- 250 g spaghetti, cooked al dente
- freshly grated Parmesan, for serving
- fresh basil leaves, for serving
Instructions
- Heat a wide skillet over medium-high heat and add the olive oil. Place the whole tomatoes in the skillet and sear them for 1–2 minutes, turning once, until the skins blister. Add the ground beef, breaking it up with a spatula. Season with salt, black pepper, garlic powder, and sweet paprika. Continue cooking, stirring occasionally, until the beef is browned and no longer pink.
- Cover the skillet with a lid and reduce the heat to medium-low. Let the mixture cook for 5 minutes, allowing the tomatoes to soften and release their juices into the beef.
- After 5 minutes, remove the lid. Use a spatula to crush the softened tomatoes directly into the browned beef. Stir to combine, letting the mixture simmer for 2–3 minutes until it thickens into a rich, savory meat sauce.
- Using tongs, transfer the cooked spaghetti directly into the bubbling sauce. Toss vigorously for 1–2 minutes, coating every strand with the tomato-meat sauce until the pasta is glossy and evenly crimson.
- Remove the skillet from the heat. Twirl a towering forkful of spaghetti into a bowl, shower with freshly grated Parmesan and fresh basil leaves. Serve immediately while hot.
