Tips for success
For the best cheese pull, use low-moisture mozzarella, which melts smoothly without becoming watery.
Grate the parmesan fresh for more flavor, and don’t skip the basil—it adds a fresh contrast to the rich sauce. If you like a little heat, add a pinch of red pepper flakes with the oregano.
To make ahead, prepare the meatballs and sear them, then store them in the fridge. When ready to cook, proceed with the recipe, adding a few extra minutes to the simmer time.
Leftovers reheat beautifully in the microwave or on the stovetop with a splash of broth to loosen the sauce.
Variations
- Spicy Sausage Version: Swap half the ground beef for spicy Italian sausage. Brown the sausage with the meatballs, and add a pinch of red pepper flakes for extra heat. The sausage adds a rich, fennel-forward flavor that pairs beautifully with the tomato sauce.
- Vegetarian Option: Replace the meatballs with store-bought plant-based meatballs or sautéed mushrooms. Use vegetable broth instead of beef broth and omit the egg in the meatballs. The dish remains hearty and satisfying, with all the cheesy goodness.
- Extra Cheesy: Add a layer of ricotta cheese dolloped over the pasta before topping with mozzarella and parmesan. The ricotta adds a creamy, rich texture that complements the tomato sauce. Stir a little into the sauce for extra creaminess.
- Herb-Infused: Add a teaspoon of dried basil or thyme to the meatball mixture, and stir in a handful of chopped fresh parsley before serving. Fresh herbs brighten the dish and add a layer of complexity.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently, adding a splash of broth or water to loosen the sauce.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the fridge and reheat in the oven at 350°F (175°C) until hot and bubbly.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or in a skillet over medium heat with a splash of broth until heated through.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will continue to absorb sauce, so when reheating, add a tablespoon of water or broth per serving to restore the saucy texture.
You can prepare the meatball mixture up to 24 hours in advance and keep it covered in the fridge. Roll and sear the meatballs when ready to cook.
The entire dish can also be assembled, covered, and refrigerated before baking, then baked when needed, adding about 10 minutes to the cooking time.
Serving ideas
Serve this pasta bake straight from the skillet, family-style, with a side of crusty bread to mop up the extra sauce.
A simple green salad with a lemon vinaigrette balances the richness. For a heartier meal, pair it with garlic bread or roasted vegetables.
This dish is perfect for casual dinners and gatherings. The cheese pull is a showstopper, so bring the skillet to the table and let everyone dig in. Portion generously—seconds are likely. Leftovers make a great lunch the next day, if there are any.

One-Pan Stuffed Shell Pasta and Meatball Bake

Ingredients
- 400 g ground beef
- 1/2 cup grated onion
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 cups marinara sauce
- 1 cup beef broth
- 2 cups dry conchiglie shell pasta
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh basil leaves
Instructions
- In a large bowl, combine the ground beef, grated onion, breadcrumbs, egg, minced garlic, oregano, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overwork. Roll the mixture into bite-sized meatballs, about 1 inch in diameter.
- Heat the olive oil in a large skillet over medium-high heat. Add the meatballs in a single layer and cook, turning occasionally, until browned on all sides, about 5 minutes. They do not need to be cooked through at this point.
- Pour the marinara sauce and beef broth into the skillet with the meatballs. Stir in the dry conchiglie pasta, making sure it is submerged in the liquid. Bring the mixture to a simmer, then reduce the heat to low, cover, and let cook for 15 minutes, stirring occasionally.
- After 15 minutes, check the pasta: it should be al dente, tender but still firm to the bite. If it is still too hard, add a splash of water or broth and continue cooking for another 2-3 minutes. The meatballs should be cooked through, reaching an internal temperature of 160°F (71°C).
- Sprinkle the shredded mozzarella and grated parmesan evenly over the pasta and meatballs. Cover the skillet and let it sit over low heat for about 3 minutes, until the cheese is melted and gooey.
- Scatter the fresh basil leaves over the top. Serve hot, scooping out the cheesy, saucy pasta and meatballs with a spoon.
