Tips for success

For a more complex flavor, consider adding a pinch of red pepper flakes to the meatball mixture. This provides a subtle heat that cuts through the richness of the cheese and the sweetness of the marinara sauce.

If you find the sauce is too thick, simply stir in an extra splash of beef broth or water. Always grate your own parmesan cheese if possible, as it melts more smoothly and provides a better flavor than pre-grated varieties.

When stuffing the shells, do not press the meatballs in too forcefully, as this can break the delicate pasta. A gentle push is all that is needed to secure the meat inside. If you have extra meatball mixture, you can form smaller, separate meatballs and place them in the gaps between the shells. This ensures no meat goes to waste and adds more variety to the final dish in the skillet.

Variations

  • Vegetarian Version: Replace the minced beef with a mixture of ricotta cheese, spinach, and finely chopped mushrooms for a delicious vegetarian alternative that keeps the dish hearty and satisfying.
  • Spicy Arrabbiata: Add two tablespoons of crushed red pepper flakes to the marinara sauce and use spicy Italian sausage instead of beef for a bold, fiery version of this classic pasta bake.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
The dish can be frozen for up to 1 month. Thaw in the refrigerator overnight before reheating.
Reheat
Reheat in the oven at 350°F (175°C) until warmed through, or in a skillet over low heat with a splash of water or broth.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Ensure the dish has cooled to room temperature, but do not leave it out for more than 2 hours to maintain food safety.

When storing, try to keep the shells intact as much as possible to ensure they reheat evenly. If the sauce has thickened significantly in the fridge, add a tablespoon of water before reheating to restore the original consistency.

You can prepare the meatballs ahead of time and keep them refrigerated for up to 24 hours before stuffing the shells. However, it is best to assemble and cook the dish fresh for the best texture.

If you must prepare it in advance, assemble the shells and sauce in the skillet, cover tightly, and refrigerate for a few hours before cooking. Add a few extra minutes to the simmering time if the ingredients are cold from the refrigerator.

Serving ideas

Serve the stuffed shells directly from the skillet to maintain the aesthetic appeal and keep the dish warm. Use a large, wide spoon to carefully lift the shells, ensuring each serving gets a portion of the meatballs and plenty of the cheesy sauce. Pair this meal with a simple side salad of crisp greens and a light vinaigrette to balance the richness of the pasta and cheese, or serve with a side of crusty garlic bread.

Consider setting out a small bowl of extra grated parmesan cheese and red pepper flakes on the table so guests can customize their servings. The fresh basil should be added at the very last moment to ensure it stays green and aromatic.

Because the dish is quite filling, smaller portions are often sufficient, making it an excellent choice for family gatherings where you want to provide a comforting and satisfying main course.

Frequently asked questions

Can this be made ahead of time?
While you can prepare the components beforehand, it is recommended to assemble and cook the dish fresh. If you must assemble it early, keep the skillet refrigerated and add a few extra minutes to the simmer time to account for the chilled ingredients.
Why is the pasta sticking to the bottom of the skillet?
Pasta can stick if the heat is too high or if there is not enough liquid. Ensure there is enough marinara and broth to cover the bottom of the pan and maintain a gentle simmer. Using a non-stick or well-seasoned skillet also helps.
Can other types of pasta be used?
Jumbo shells are specifically designed for stuffing, so they work best here. If you use smaller pasta shapes, they will not hold the meatball filling effectively. Stick to jumbo shells or similar large, hollow pasta varieties for the best results.

Ingredients

  • 400 grams minced beef
  • 1/4 cup parmesan cheese, grated
  • 1 egg
  • 1/2 cup breadcrumbs
  • 2 cloves minced garlic
  • 1 tsp dried Italian oregano and basil
  • salt and black pepper to taste
  • 12 oz jumbo pasta shells, uncooked
  • 2 cups tomato marinara sauce
  • 1 cup hot beef broth
  • 1 1/2 cups shredded whole-milk mozzarella
  • 1/4 cup grated parmesan cheese
  • fresh basil leaves for serving

Instructions

  1. In a large mixing bowl, combine the minced beef, parmesan cheese, egg, breadcrumbs, minced garlic, dried oregano, basil, salt, and pepper. Mix until just combined and roll into small, bite-sized spherical meatballs.
  2. Place one raw meatball inside each uncooked jumbo pasta shell. Arrange the stuffed shells in a deep skillet in tight, concentric circles. Pour the marinara sauce and hot beef broth over the shells, ensuring they are mostly covered.
  3. Cover the skillet with a lid and simmer on medium heat for 18 minutes until the pasta shells are tender and the meatballs are cooked through to an internal temperature of 160°F (71°C).
  4. Remove the lid from the skillet. Evenly sprinkle the shredded mozzarella and grated parmesan over the pasta. Place the skillet under the oven broiler for 3 minutes until the cheese is melted, blistered, and golden brown. Scatter with torn fresh basil leaves before serving.
