Tips for success
For the best flavor, use ripe, in-season tomatoes and eggplants. If the eggplants are large, you can cut them into smaller chunks to ensure they cook evenly.
The steaming step is crucial—don't rush it, as the vegetables need to be fully tender to mash into a smooth puree. When peeling the skins, use tweezers or tongs to handle the hot vegetables safely.
To make the dish even more flavorful, you can add a pinch of red pepper flakes for heat or a splash of balsamic vinegar for acidity.
If you prefer a creamier sauce, stir in a spoonful of cream or a dollop of ricotta along with the mozzarella. Leftovers can be stored in the refrigerator and reheated gently with a splash of water to loosen the sauce.
Variations
- Add Protein: For a heartier meal, add cooked Italian sausage, ground beef, or chickpeas along with the pasta. Brown the protein first, then proceed with the recipe as written, adjusting the liquid if needed.
- Spicy Version: Add 1/2 teaspoon red pepper flakes or a chopped fresh chili along with the spices for a spicy kick. Finish with a drizzle of chili oil before serving.
- Herb Swap: Replace the basil with fresh oregano or a mix of parsley and thyme. Add the herbs along with the mozzarella for a different aromatic profile.
- Cheese Variations: Use provolone, fontina, or a blend of Italian cheeses instead of mozzarella for a different flavor. Smoked mozzarella adds a subtle smokiness.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water to restore the sauce's creamy texture.
- Freezer
- The cooked pasta can be frozen in an airtight container for up to 2 months.
- Reheat
- Reheat in a skillet over medium-low heat with a splash of water or broth, stirring until hot and creamy.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will continue to absorb sauce as it sits, so add a splash of water or broth when reheating to restore the creamy texture. Reheat gently in a skillet over medium-low heat or in the microwave, stirring occasionally until heated through.
The vegetable puree can be made up to 2 days ahead and stored in the refrigerator. When ready to cook, reheat the puree in a skillet, add the pasta and boiling water, and proceed with the recipe. This makes weeknight dinner even quicker. The finished dish is best enjoyed fresh but can be refrigerated and reheated within a day or two.
Serving ideas
Serve the pasta hot, straight from the skillet, with extra fresh basil leaves scattered on top. A sprinkle of grated Parmesan or a drizzle of good olive oil would be a nice addition, though not necessary.
This dish is hearty enough to stand alone as a main course, but it also pairs well with a simple green salad and crusty bread for a complete meal.
For a more elegant presentation, spoon the pasta into shallow bowls and garnish with a few whole basil leaves. The glossy, cheesy sauce makes it look rustic and appetizing.
This is a family-friendly dinner that pleases both kids and adults, and it's sure to become a regular in the rotation. Enjoy it with a glass of red wine or a sparkling water with lemon.

One-Pan Roasted Eggplant & Tomato Shell Pasta

Ingredients
- 1/4 cup olive oil
- 1/2 cup water
- 2 eggplants (cut into cylindrical halves)
- 3 whole ripe tomatoes
- 1 red bell pepper
- 1 peeled red onion
- 1 tsp sweet paprika
- 1 tsp ground cumin
- 1 tsp salt
- Black pepper to taste
- 250 g pipe rigate shell pasta
- 1 cup boiling water
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for stirring and garnish, to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the eggplant halves, whole tomatoes, red bell pepper, and peeled red onion. Pour in the 1/2 cup water, cover with a glass lid, and steam for 12 minutes until the vegetables are tender and the skins loosen.
- Remove the lid and use culinary tweezers to peel away the loose skins from the tomatoes, pepper, and eggplant. Discard the skins. Season the vegetables with the sweet paprika, cumin, salt, and a generous grind of black pepper.
- Use a potato masher to crush the vegetables directly in the skillet until you have a rich, fragrant puree. The mixture should be thick and slightly chunky, not completely smooth.
- Add the pipe rigate shell pasta directly into the skillet with the vegetable puree. Pour in the 1 cup boiling water and stir to combine. Bring the mixture to a simmer.
- Cook the pasta, stirring frequently, until it is al dente and has absorbed most of the liquid, about 10-12 minutes. The sauce will thicken and coat the shells as they cook.
- Stir in the fresh basil leaves and the shredded mozzarella cheese until the cheese is melted and gooey. The pasta should be glossy and coated with the cheesy sauce.
- Scoop the steaming pasta into bowls, making sure to get plenty of the cheesy sauce. Garnish with a few fresh basil leaves if desired. Serve hot.
