Tips for success
To enhance the browning of the potatoes, make sure they are placed cut-side down on the glass baking dish during the initial roasting phase. This direct contact with the hot glass caramelizes the natural sugars in the potatoes, creating a deep golden, crispy surface that contrasts wonderfully with their soft, buttery interiors.
If the chicken breasts are exceptionally large, consider cutting them in half horizontally to create cutlets, or increase the final baking time by five to ten minutes. Always rely on the internal temperature rather than visual cues alone to ensure the chicken is perfectly cooked through while remaining incredibly juicy and tender.
Variations
- Lemon Herb Chicken: Substitute the mixed dried herbs with dried oregano and add two tablespoons of fresh lemon juice to the garlic-oil mixture for a bright, Mediterranean flavor profile.
- Spicy Garlic Chicken: Add a half teaspoon of red pepper flakes to the garlic-herb oil to introduce a subtle, warming heat that complements the roasted potatoes.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freezing is not recommended as the green beans and potatoes will become mushy upon thawing.
- Reheat
- Reheat in a preheated oven at 350°F (175°C) covered with foil for 15 minutes, or microwave on medium power until hot.
Allow any leftovers to cool completely at room temperature for no more than two hours to comply with food safety guidelines. Transfer the chicken, potatoes, and green beans into a shallow, airtight container.
Store the container in the refrigerator to keep the components fresh. Properly stored, this meal will maintain its excellent flavor and texture for up to three to four days, making it a fantastic option for planned weekday lunches.
While this dish is best enjoyed fresh from the oven, you can prepare several components in advance to save time. Wash, dry, and cut the potatoes, and trim the green beans the day before, storing them in separate airtight containers in the fridge.
You can also mix the olive oil, minced garlic, and dried herbs in a small jar ahead of time, leaving only the assembly and roasting for dinner tonight.
Serving ideas
Serve this complete meal directly from the warm glass baking dish to keep the components hot and preserve the delicious pan juices. Arrange the sliced chicken breasts in the center, flanked by the golden roasted potatoes and vibrant green beans.
Spoon the savory garlic-herb pan juices from the bottom of the dish directly over the chicken slices and vegetables just before serving to add a burst of moisture and flavor.
For an elegant presentation, transfer the sliced chicken and roasted vegetables to a large, pre-warmed serving platter.
A light sprinkle of fresh herbs or a few sprigs of fresh rosemary can be placed on the side to enhance the rustic, holiday-style aesthetic. Pair this hearty dish with a simple side salad or crusty bread to soak up any remaining savory juices.

One-Pan Garlic Herb Chicken and Potatoes with Green Beans

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 1 lb baby gold potatoes, halved
- 8 oz green beans, trimmed
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1 tbsp mixed dried herbs (such as rosemary, thyme, and oregano)
Instructions
- Preheat the oven to 400°F (200°C). In a large mixing bowl, combine the halved baby gold potatoes, two tablespoons of olive oil, half of the minced garlic, and half of the mixed dried herbs. Toss thoroughly until the potatoes are evenly coated with the garlic-herb oil.
- Transfer the seasoned baby gold potatoes to a glass baking dish, arranging them cut-side down in a single layer to ensure maximum caramelization. Place the dish in the preheated oven and roast for 15 minutes, allowing the potatoes to start softening and browning before adding the remaining ingredients.
- While the potatoes are roasting, prepare the boneless skinless chicken breasts. Rub the chicken breasts with the remaining tablespoon of olive oil, the remaining minced garlic, and the remaining mixed dried herbs. Ensure the herb crust covers all sides of the meat.
- Carefully remove the glass baking dish from the oven. Push the partially roasted potatoes to one side of the dish. Place the seasoned chicken breasts into the center of the dish, and add the trimmed green beans to the remaining open space. Drizzle any leftover garlic-herb oil over the green beans.
- Return the glass baking dish to the oven and bake for an additional 20 to 25 minutes. The chicken is safe and fully cooked when a meat thermometer inserted into the thickest part registers an internal temperature of 165°F (74°C). The potatoes should be fork-tender and the green beans tender-crisp.
- Remove the baking dish from the oven and let the chicken rest in the pan juices for 5 minutes. Transfer the chicken breasts to a cutting board and slice them crosswise into neat, thick slices. Arrange the sliced chicken back in the glass baking dish alongside the roasted potatoes and green beans before serving.
