Before you start

Before beginning, preheat the oven to 400°F (200°C) to ensure it reaches the correct roasting temperature. Wash and thoroughly dry the baby gold potatoes and green beans; wet vegetables will steam instead of roast, preventing them from getting crispy.

Halve the potatoes and trim the ends off the green beans. Mince the garlic cloves and measure out the dried herbs and olive oil. Keep the chicken breasts cold in the refrigerator until you are ready to apply the herb rub.

Ingredients at a glance (6)
  • 1 1/2 lb boneless skinless chicken breasts
  • 1 lb baby gold potatoes, halved
  • 8 oz green beans, trimmed
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 1 tbsp mixed dried herbs (such as rosemary, thyme, and oregano)

Instructions

Potato Seasoning and Initial Roast

  1. Prep and Toss the Potatoes
Preheat the oven to 400°F (200°C). In a large mixing bowl, combine the halved baby gold potatoes, two tablespoons of olive oil, half of the minced garlic, and half of the mixed dried herbs. Toss thoroughly until the potatoes are evenly coated with the garlic-herb oil.
Look for The potatoes should be glistening and completely specked with herbs and garlic.
Tip Cutting the potatoes to a uniform size ensures they cook evenly in the oven.
  2. Roast the Potatoes First
Transfer the seasoned baby gold potatoes to a glass baking dish, arranging them cut-side down in a single layer to ensure maximum caramelization. Place the dish in the preheated oven and roast for 15 minutes, allowing the potatoes to start softening and browning before adding the remaining ingredients.
Look for The edges of the potatoes will begin to sizzle and turn slightly golden.
Tip Placing the cut side down creates a beautiful, crispy golden crust on the potato flesh.

At the end of this first phase, the baby gold potatoes should be sizzling gently in the glass baking dish. The edges will begin to show a faint golden color, and the kitchen will fill with the rich, warm aroma of roasted garlic and toasted herbs. The potatoes will be slightly softened but not yet fully tender when poked with a fork.

Chicken Seasoning and Assembly

  1. Season the Chicken
While the potatoes are roasting, prepare the boneless skinless chicken breasts. Rub the chicken breasts with the remaining tablespoon of olive oil, the remaining minced garlic, and the remaining mixed dried herbs. Ensure the herb crust covers all sides of the meat.
Look for The chicken breasts should be thoroughly coated in the fragrant herb rub.
Tip Keep the raw chicken cold in the refrigerator until right before seasoning to maintain food safety.
  2. Assemble the Baking Dish
Carefully remove the glass baking dish from the oven. Push the partially roasted potatoes to one side of the dish. Place the seasoned chicken breasts into the center of the dish, and add the trimmed green beans to the remaining open space. Drizzle any leftover garlic-herb oil over the green beans.
Look for The ingredients should fit snugly but remain in a single layer for even cooking.
Tip Space the chicken breasts slightly apart so hot air can circulate around them completely.

By the end of this phase, the raw chicken breasts are fully coated in the herb rub and nestled into the baking dish alongside the green beans and partially roasted potatoes. The green beans should be lightly coated in the seasoned oil. The dish is completely assembled and ready for the final bake.

Final Bake and Slicing

  1. Bake Until Fully Cooked
Return the glass baking dish to the oven and bake for an additional 20 to 25 minutes. The chicken is safe and fully cooked when a meat thermometer inserted into the thickest part registers an internal temperature of 165°F (74°C). The potatoes should be fork-tender and the green beans tender-crisp.
Look for The pan juices will bubble vigorously, and the green beans will turn a vibrant green.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not overcook the chicken breasts, as they can dry out quickly once past the safe temperature.
  2. Rest and Slice
Remove the baking dish from the oven and let the chicken rest in the pan juices for 5 minutes. Transfer the chicken breasts to a cutting board and slice them crosswise into neat, thick slices. Arrange the sliced chicken back in the glass baking dish alongside the roasted potatoes and green beans before serving.
Look for Slicing the chicken should release clear, glistening juices without tearing the herb crust.
Tip Resting the meat is essential to let the juices redistribute, keeping every bite incredibly tender.

At the conclusion of the final bake, the chicken breasts will have a beautiful, matte herb crust, and the pan juices will be bubbling vigorously at the bottom of the dish.

The green beans will appear bright green and tender-crisp, while the potatoes will be deeply golden and easily pierced with a fork. Slicing the rested chicken reveals glistening, moist meat.

Common mistakes

The most common mistake is crowding the baking dish or adding all the ingredients at once. If the potatoes, chicken, and green beans are piled on top of each other, they will trap steam, resulting in mushy potatoes and soggy green beans.

Another frequent error is skipping the initial roast for the potatoes; doing so results in either undercooked, hard potatoes or overcooked, dry chicken breasts.

How to tell it’s done

To accurately determine doneness, always use a reliable digital meat thermometer. Insert the probe into the thickest part of the chicken breast; it must register an internal temperature of 165°F (74°C) to be safe for consumption.

The potatoes are done when they can be easily pierced to the center with a fork, and the green beans should be tender yet retain a slight bite.

  • Poultry: 165°F (74°C) in the thickest part
