Tips for success
For the best flavor, use high-quality extra virgin olive oil for searing—it adds a fruity note that complements the tomato sauce.
If you have time, let the sauce simmer a few extra minutes to concentrate flavors. You can also add a pinch of red pepper flakes for a subtle heat.
To make this dish even quicker, prepare the meatballs and pasta ahead of time. Store them separately in the refrigerator, then combine and reheat gently with a splash of broth or cream.
The sauce can be made ahead and reheated, but add the pasta just before serving to keep it from absorbing too much liquid.
Variations
- Spicy Sausage Version: Replace the beef meatballs with spicy Italian sausage, removed from casings and rolled into small balls. Add a pinch of red pepper flakes for extra heat. The spicy sausage adds a kick that pairs well with the creamy tomato sauce.
- Vegetarian Option: Use vegetarian meatballs or omit them and add sautéed mushrooms for a meaty texture. Increase the amount of pasta to 300 g to make up for the missing protein. The sauce remains rich and satisfying.
- Cheesy Baked Version: After folding the pasta into the sauce, transfer everything to a baking dish, top with extra mozzarella and breadcrumbs, and broil until golden and bubbly. This makes a great casserole-style dinner.
- Herb-Infused Sauce: Add a teaspoon of dried oregano or a sprig of fresh rosemary to the sauce while simmering. Remove the rosemary before serving. The herbs add depth and aroma, making the dish even more comforting.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of broth or cream to restore the sauce's creamy texture.
- Freezer
- Freeze the cooked meatballs and sauce (without pasta) for up to 3 months. Thaw overnight in the refrigerator, then reheat and add freshly cooked pasta.
- Reheat
- Reheat leftovers in a skillet over medium-low heat, adding a splash of broth or cream to loosen the sauce. Stir frequently until heated through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some sauce, so add a splash of broth or cream when reheating to restore the creamy texture.
The meatballs can be made up to 2 days ahead and kept refrigerated. The sauce can also be prepared in advance, but keep it separate from the pasta. When ready to serve, reheat the sauce, add cooked pasta, and heat through.
Serving ideas
Serve the pasta hot, straight from the skillet for a casual family dinner.
It pairs well with a simple green salad and crusty bread to soak up any extra sauce. A sprinkle of fresh parsley or grated Parmesan on top adds a nice finish.
For a more elegant presentation, plate individual portions with a twist of black pepper and a drizzle of olive oil.
The dish is hearty enough to be a main course, but can also be served in smaller portions as a side. Leftovers taste great the next day, though the pasta will be softer.

One-Pan Creamy Tomato Meatball Shell Pasta

Ingredients
- 3 tbsp extra virgin olive oil
- 40 mini seasoned beef meatballs
- 2 tbsp tomato paste
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt, to taste
- Black pepper, to taste
- 1 cup vegetable broth
- 100 ml heavy cream (about 1/2 cup)
- 100 g shredded mozzarella cheese (about 1 cup)
- 250 g conchiglie shell pasta, cooked al dente (about 5 cups cooked)
- Fresh parsley, chopped, for garnish, to taste
Instructions
- Heat the extra virgin olive oil in a large skillet over medium-high heat. Add the mini meatballs in a single layer and cook, turning occasionally, until browned on all sides, about 5 to 7 minutes. The meatballs do not need to be cooked through yet; they will finish in the sauce.
- Reduce the heat to medium. Add the tomato paste, minced garlic, paprika, salt, and pepper to the skillet. Stir constantly for 1 minute until fragrant and the tomato paste darkens slightly.
- Pour in the vegetable broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and let cook for 5 minutes, allowing the sauce to thicken slightly and the meatballs to cook through.
- Stir in the heavy cream and shredded mozzarella. Continue stirring gently until the cheese melts and the sauce turns a luscious, creamy orange and becomes velvety.
- Add the cooked shell pasta and chopped parsley to the skillet. Gently fold everything together, making sure the shells are coated with the sauce and some capture the mini meatballs.
- Spoon the pasta and meatballs onto plates, making sure to get a good mix of shells, meatballs, and creamy sauce. Garnish with extra parsley if desired. Serve piping hot.
