Tips for success
For the best texture, use long-grain white rice, which stays fluffy and separate. Avoid using instant rice or brown rice, as they have different cooking times and liquid ratios.
If you want to add protein, you can stir in cooked shredded chicken or ground beef before baking, but the video shows a vegetarian version. To make the dish spicier, add a minced jalapeño or a pinch of cayenne to the broth. You can also use a spicy cheese blend for extra heat.
When measuring the broth, use a liquid measuring cup for accuracy. If you don’t have tomato broth, you can use a combination of chicken or vegetable broth and tomato sauce. The cumin is essential, but you can also add a teaspoon of chili powder for extra depth.
For a cheesier top, use a mix of sharp cheddar and Monterey Jack. If you prefer a more pronounced tomato flavor, use a higher-quality canned tomato puree. Always taste the broth before pouring to adjust the salt and spices.
Variations
- Spicy Chorizo Rice Bake: Brown 1/2 pound fresh chorizo in a skillet, then crumble it over the rice before adding the broth. The chorizo adds a spicy, savory depth that complements the cumin and tomato. Bake as directed.
- Vegetable Rice Bake: Add 1 cup of frozen peas and carrots, or a diced bell pepper, to the rice before pouring the broth. The vegetables cook alongside the rice, adding color and nutrition. Use a mild cheese for a family-friendly version.
- Creamy Green Chile Rice Bake: Stir 1 can (4 oz) of diced green chiles into the broth, and use a blend of Monterey Jack and pepper jack cheese. The green chiles add a mild heat and a tangy flavor that pairs well with the cumin.
- Black Bean and Corn Rice Bake: Add 1 cup of drained black beans and 1 cup of frozen corn to the rice before baking. The beans add protein and fiber, and the corn adds sweetness. Top with a sprinkle of smoked paprika for extra flavor.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat with a splash of broth to restore moisture.
- Freezer
- Freeze the baked dish for up to 3 months. Thaw overnight in the refrigerator and reheat in the oven at 350°F (175°C) until hot.
- Reheat
- Reheat individual portions in the microwave for 1-2 minutes, or in the oven at 350°F (175°C) covered with foil for 10-15 minutes.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The rice will absorb some liquid as it sits, so it may become slightly drier. To reheat, add a splash of broth or water and microwave until hot.
You can also reheat in the oven at 350°F (175°C) covered with foil for 10-15 minutes. The cheese may lose its crispiness upon reheating, but the flavor will remain. For best results, reheat only the amount you plan to eat.
This dish can be assembled up to a day in advance. Prepare the rice, broth, and cheese as directed, but do not bake. Cover the dish tightly with foil and refrigerate. When ready to bake, you may need to add 10-15 minutes to the covered baking time, as the dish will be cold.
Alternatively, you can bake the dish completely and then reheat it. This makes it a great option for meal prep or entertaining. Just be sure to let it cool completely before refrigerating.
Serving ideas
Serve this cheesy Mexican rice bake as a main dish with a side of fresh salad, grilled vegetables, or refried beans. It also pairs well with grilled chicken, steak, or fish. For a complete meal, add a dollop of sour cream and a sprinkle of fresh cilantro on top. The creamy, cheesy rice is satisfying on its own, but the toppings add brightness and contrast. You can also serve it as a side dish alongside tacos, enchiladas, or fajitas.
For a fun presentation, serve the bake directly from the baking dish, letting guests scoop out their own portions. Garnish with sliced jalapeños, diced avocado, or a squeeze of lime juice for extra freshness. The dish is best served warm, straight from the oven. If you have leftovers, you can use them to make burrito bowls or stuffed peppers. The possibilities are endless, and the flavor is always a hit.
