Before you start

Before starting, gather all your ingredients and equipment. Preheat the oven to 375°F (190°C) so it’s ready when you are. Measure out the rice, broth, cumin, salt, and cheese. Have a 9x13-inch baking dish and a small pitcher or measuring cup ready. If you’re making your own tomato broth, do that first.

This recipe comes together quickly, so having everything at hand makes the process smooth. There’s no need to rinse the rice; the video shows it going straight into the dish. This also helps the rice absorb the broth better. Make sure your cheese is shredded, as pre-shredded cheese may not melt as smoothly.

Ingredients at a glance (5)
  • 2 cups long-grain white rice, uncooked
  • 3 cups tomato broth (see note)
  • 1 tbsp ground cumin
  • 1 tsp salt
  • 2 cups shredded yellow and white cheese blend

Instructions

Assemble the bake

  1. Prepare the rice and broth
Preheat the oven to 375°F (190°C). Spread the uncooked long-grain white rice evenly in the bottom of a 9x13-inch baking dish. In a small pitcher or measuring cup, stir together the tomato broth, ground cumin, and salt until well combined.
Look for The rice forms an even layer covering the dish bottom.
Tip Use a fork to spread the rice for an even layer.
  2. Pour the broth over the rice
Slowly pour the seasoned tomato broth over the rice, making sure all the grains are submerged. Gently shake the dish to settle the rice and broth evenly.
Look for The liquid just covers the rice, with no dry grains visible.
Tip Pouring slowly prevents the rice from shifting into a pile.
  3. Top with cheese
Scatter the shredded yellow and white cheese blend evenly over the top of the rice and broth mixture.
Look for The cheese forms a thick, even layer over the surface.
Tip Use a mix of cheeses for better melting and flavor.

At this point, the baking dish contains an even layer of dry rice, covered with the seasoned tomato broth and topped with a thick layer of shredded cheese. The broth should be just enough to cover the rice, and the cheese should be evenly distributed, leaving no dry spots. The dish is ready to go into the oven. The colors are vibrant—the orange-red broth contrasts nicely with the yellow and white cheese. The cumin and tomato aromas are already inviting. Before baking, double-check that the oven is preheated and the foil is ready to cover the dish.

Bake until golden

  1. Bake covered
Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes.
Look for The dish is steaming inside, and the rice absorbs the liquid.
Tip A tight seal traps steam for even cooking.
  2. Uncover and bake until golden
Remove the foil carefully, and continue baking for 15 minutes more, or until the cheese is golden and bubbling at the edges and the rice is tender.
Look for The cheese is bubbly and lightly browned, and the rice is fluffy.
Tip If the cheese browns too quickly, cover loosely with foil.

After the covered baking time, the dish will be steaming and the rice will have absorbed most of the liquid. The cheese will have melted and started to bubble. After the uncovered baking time, the cheese should be golden brown with bubbling edges, and the rice should be fluffy and tender. The kitchen will smell of toasted cheese and cumin. Check that the rice is cooked through by tasting a few grains. The top should be set but still slightly soft in the center. If it needs more time, return it to the oven for a few extra minutes.

Rest and serve

  1. Rest and serve
Let the dish stand for 5 minutes before serving. Use a large spoon to scoop out portions, lifting the rice from the bottom to the top.
Look for The rice is fluffy and orange-red, with a short cheese stretch.
Tip Resting helps the rice set and makes serving easier.

After resting, the dish will have settled, and the cheese will have firmed up slightly. When you scoop into it, the rice should be fluffy and separate, with a rich orange-red color from the tomato broth. The cheese will stretch nicely as you lift the spoon.

The aroma is warm and comforting, with notes of cumin, tomato, and melted cheese. The dish is ready to serve immediately. Use a large spoon to get a good portion of rice and cheese from the top to the bottom. The texture should be creamy from the cheese and broth, with a slight bite from the rice.

Common mistakes

One common mistake is using a baking dish that’s too small, causing the liquid to overflow. Stick to a 9x13-inch dish. Another is skipping the foil covering, which can result in undercooked rice and a dry top. Make sure the foil is tightly sealed to trap steam.

Overbaking can dry out the rice, so keep an eye on the time. If you prefer a softer rice, you can add a few extra tablespoons of broth. Also, avoid stirring the dish during baking, as this can break the rice grains and make them gluey. Let the dish rest after baking to allow the rice to firm up slightly.

How to tell it’s done

The dish is done when the rice is tender and has absorbed most of the liquid, and the cheese is golden and bubbling at the edges. To check, insert a fork into the center of the dish and lift a few grains of rice—they should be soft and fully cooked, with no chalky centers.

The top should be a deep golden brown, with some spots of darker brown for flavor. If the cheese is browning too quickly before the rice is done, cover the dish loosely with foil and continue baking. Let the dish rest for 5 minutes before serving; this allows the rice to set and makes it easier to scoop out clean portions.
