Tips for success
For the best texture, use freshly shredded mozzarella rather than pre-shredded, which often contains anti-caking agents that can affect melting.
If you prefer a spicier kick, add a pinch of red pepper flakes with the oregano. To make the dish even more indulgent, stir in a tablespoon of butter at the end for extra richness.
If you have leftover meatballs, they can be frozen for up to 3 months. The pasta is best served fresh, but leftovers can be reheated in a skillet with a splash of broth to loosen the sauce.
For a crispier cheese top, finish the skillet under the broiler for 1 to 2 minutes, watching closely to prevent burning.
Variations
- Spicy Sausage Version: Replace half the ground beef with spicy Italian sausage, removing the casings. Proceed as directed, but reduce the salt in the seasoning since sausage is often salty. Add a pinch of red pepper flakes for extra heat.
- Vegetarian Option: Skip the meatballs and use plant-based meatballs or extra mushrooms. Sauté the mushrooms with the seasonings, then add the pasta and liquids. Cook until the pasta is done and top with mozzarella.
- Gluten-Free Adaptation: Use gluten-free shell pasta and ensure the marinara and broth are gluten-free. The cooking time may vary slightly, so check the pasta for doneness a few minutes early.
- Creamy Tomato Twist: Stir in 1/4 cup heavy cream or cream cheese after the pasta has cooked, before adding the mozzarella. This adds a rich, creamy element to the sauce.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of broth when reheating to loosen the sauce.
- Freezer
- Freeze the cooked pasta in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a skillet over medium heat with a splash of broth or water, stirring gently, until hot and bubbly.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will continue to absorb sauce, so add a splash of broth or water when reheating to restore a saucy consistency. Reheat gently on the stovetop or in the microwave until piping hot.
The meatballs can be rolled and refrigerated up to 24 hours ahead. You can also sear the meatballs and store them in the fridge until ready to use. When ready to cook, proceed with the recipe, adding a few extra minutes to the simmering time if the meatballs are cold.
Serving ideas
Serve the pasta hot, straight from the skillet, with a generous scoop that includes meatballs, shells, and plenty of melted cheese.
A side of crusty bread or a simple green salad complements the rich flavors. For a family-style meal, place the skillet in the center of the table and let everyone serve themselves.
This dish is satisfying enough to stand alone, but it also pairs well with roasted vegetables or a light Caesar salad.
For a more indulgent touch, garnish with extra parsley and a sprinkle of grated Parmesan cheese. The cheese pull is part of the fun, so encourage everyone to scoop deep to get those long, gooey strands.

One-Pan Cheesy Meatball Shell Pasta

Ingredients
- 1 lb ground beef
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 cups dry conchiglie shell pasta
- 2 cups rich marinara tomato sauce
- 2 cups broth
- 1 tsp dried oregano
- 1 1/2 cups shredded mozzarella cheese
- 2 tbsp fresh parsley, chopped
Instructions
- In a mixing bowl, combine the ground beef with garlic powder, cumin, smoked paprika, salt, and black pepper. Mix gently until just combined. Roll the mixture into bite-sized mini meatballs, about 1 inch in diameter.
- Heat the olive oil in a large skillet over medium-high heat. Add the meatballs in a single layer and sear until browned on all sides, about 4 to 5 minutes total. They do not need to be cooked through at this point.
- Add the dry conchiglie pasta to the skillet with the meatballs. Pour in the marinara sauce and broth. Stir in the dried oregano and a pinch of black pepper. Bring the mixture to a simmer.
- Cover the skillet with a lid and reduce the heat to medium. Simmer for 12 minutes, or until the pasta is al dente and has absorbed most of the liquid. Stir once halfway through to prevent sticking.
- Uncover the skillet and sprinkle the shredded mozzarella evenly over the pasta and meatballs. Cover again and cook for 2 to 3 minutes, until the cheese is melted and bubbly.
- Remove the skillet from the heat and sprinkle with the chopped fresh parsley. Scoop the cheesy pasta onto plates, making sure to get a long mozzarella pull with each serving.
