Tips for success
For an extra golden crust, broil for an additional minute if needed, but watch continuously to prevent burning. If using fresh mozzarella, pat it dry with paper towels before shredding to reduce moisture.
To make the dish ahead, assemble without the cheese topping, cover, and refrigerate for up to 24 hours, then add the cheese and broil as directed.
Serve with crusty bread to soak up any remaining sauce. A simple green salad with a vinaigrette balances the richness of the dish.
For a spicier kick, add red pepper flakes to the meatball mixture or sprinkle over the top before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
Variations
- Spicy Sausage Version: Substitute half of the ground beef with 1/2 pound of spicy Italian sausage (casings removed). Brown the sausage along with the meatballs, and add a pinch of red pepper flakes to the sauce for extra heat.
- Vegetarian Mushroom Rigatoni: Skip the meatballs and add 8 ounces of cremini mushrooms, sliced and sautéed in olive oil until golden. Toss with the pasta and sauce, then top with cheese and broil as directed.
- Chicken Meatball Twist: Use ground chicken instead of beef, and add 1 teaspoon of fennel seeds to the meatball mixture. Cook to an internal temperature of 165°F (74°C) to ensure they are fully cooked.
- Extra Cheesy Rigatoni: Mix 1/2 cup of ricotta cheese into the marinara sauce before tossing with the pasta. Add an extra 1/2 cup of shredded mozzarella on top, and finish with a drizzle of olive oil before broiling.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven with a splash of water.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a 350°F (175°C) oven for 15-20 minutes, or microwave individual portions for 2-3 minutes.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some sauce as it sits; add a splash of water or additional marinara when reheating to restore the saucy consistency. For longer storage, freeze in a freezer-safe container for up to 3 months.
The meatballs can be rolled and refrigerated for up to 24 hours before cooking. The assembled dish, without the cheese topping, can be prepared a day ahead and stored in the refrigerator; add the cheese just before broiling.
The baked rigatoni can also be frozen after baking—cool completely, wrap tightly, and freeze for up to 3 months.
Serving ideas
Serve the baked rigatoni hot from the skillet, scooping generous portions onto plates. The cheese pull is the highlight—lift the spoon high to let the strands stretch.
Pair with a simple arugula salad dressed with lemon and olive oil to cut through the richness. A glass of Chianti or Sangiovese complements the tomato and beef flavors.
For a family-style presentation, bring the skillet to the table and let guests serve themselves. Garnish with extra basil leaves and a sprinkle of grated parmesan at the table. The dish is hearty enough to stand alone, but garlic bread or a green vegetable like sautéed spinach makes a welcome addition.

One-Pan Baked Rigatoni with Garlic Meatballs

Ingredients
- 1 lb rigatoni pasta
- 1 lb ground beef
- 1/2 cup plain breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 large egg
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 3 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh basil leaves
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, grated parmesan, egg, minced garlic, oregano, salt, and black pepper. Mix gently with your hands until just combined. Roll the mixture into 1 1/2-inch meatballs (about 12 to 14).
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the meatballs in a single layer and sear until browned on all sides, about 4 to 5 minutes total. Remove the meatballs to a plate; they will not be cooked through.
- Bring a large pot of salted water to a boil. Cook the rigatoni according to package directions until 2 minutes shy of al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- Return the drained rigatoni to the pot or a large bowl. Add the marinara sauce and reserved pasta water; stir to coat the pasta evenly. Gently fold in the seared meatballs. Transfer the mixture to a large oven-safe skillet or baking dish, spreading it into an even layer.
- Sprinkle the shredded mozzarella evenly over the top, followed by the grated parmesan. Make sure the cheese covers the entire surface for a golden, bubbly crust.
- Preheat the broiler to high. Place the skillet under the broiler, about 6 inches from the heat, and broil for 4 to 5 minutes until the cheese is melted, bubbling, and blistered in spots. Watch closely to prevent burning.
- Remove the skillet from the oven and let it rest for 5 minutes. Scatter the fresh basil leaves over the top. Scoop onto plates, ensuring each serving gets a long cheese pull.
