Tips for success
For the best flavor, use a good-quality habanero lime salsa that has a balance of heat and acidity. If you can’t find one, make your own by blending roasted habaneros, lime juice, and tomatoes.
Taste the salsa before adding it—if it’s very spicy, use a little less, and if it’s mild, you can add a pinch of cayenne.
This barbacoa is incredibly versatile. Serve it in warm corn tortillas with pickled onions, over rice, or on tostadas. The leftovers are even better the next day, as the flavors continue to develop.
Store any extras in an airtight container in the refrigerator for up to 4 days, and reheat gently on the stovetop or in the microwave.
Variations
- Chicken Barbacoa: Replace the beef chuck with 3 pounds of boneless, skinless chicken thighs. Cook on low for 4 to 5 hours, or until shreddable. The chicken cooks faster, so check early. The cheese and mango glaze work perfectly with poultry.
- Pork Version: Use 2 1/2 pounds of pork shoulder, cut into cubes. Cook on low for 8 hours, or until fork-tender. The pork will be slightly sweeter and pairs beautifully with the mango and habanero.
- Milder Heat: Substitute the habanero salsa with a mild tomato salsa and add 1 tablespoon of lime juice. Skip the habanero entirely for a family-friendly version that still has plenty of flavor from the mango and cheese.
- Smoky Twist: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of ground cumin to the beef before layering. The smokiness complements the sweet mango and adds depth to the cheese sauce.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a splash of broth or water if needed.
Store leftover barbacoa in an airtight container in the refrigerator for up to 4 days. Let it cool to room temperature before refrigerating, but don’t leave it out for more than 2 hours.
Reheat gently on the stovetop over low heat, adding a splash of water or broth if needed to loosen the sauce.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time to account for the cold start. Alternatively, cook the barbacoa fully, then cool and refrigerate; reheat gently before serving.
Serving ideas
Serve the barbacoa warm, spooned over steamed rice or into warm tortillas. For a complete meal, add a side of refried beans, a simple slaw, or pickled onions. The sweet-heat glaze pairs well with cooling toppings like sour cream or avocado.
This dish is also excellent as a filling for burritos, quesadillas, or nachos. For a low-carb option, serve it over cauliflower rice or in lettuce cups. Garnish with extra cilantro, lime wedges, and a drizzle of crema if desired.

Oaxaca Queso Mango Habanero Beef Barbacoa

Ingredients
- 2 1/2 lb beef chuck, cut into 2-inch cubes
- 2 cups ripe mango, diced
- 1 cup habanero lime salsa
- 1/2 cup fresh cilantro, chopped
- 2 cups shredded Oaxaca cheese
- 2 cups Mexican four-cheese blend, shredded
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Place the beef chuck cubes in the slow cooker in an even layer. Season with salt and black pepper. Scatter the diced mango, habanero lime salsa, and chopped cilantro over the beef, spreading them evenly. Do not stir.
- Shower the shredded Oaxaca cheese and the Mexican four-cheese blend evenly over the entire surface of the meat and fruit mixture. Press down gently with a spoon to create a compact layer.
- Cover the slow cooker and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is fork-tender and easily shreds. The cheese will melt, blister, and create a rich glaze with the mango and salsa. Let it rest for 3 minutes before slicing.
- Using two forks, shred the beef directly in the slow cooker, mixing it gently with the melted cheese and mango-habanero glaze. If the sauce seems thin, leave the lid off for 15 minutes on low to thicken. Let it rest for 3 minutes before slicing.
- Let the barbacoa rest for 10 minutes before serving. Spoon over warm tortillas, rice, or into bowls. Garnish with extra cilantro if desired.
