Tips for success
For the best texture, use fresh Medjool dates that are soft and sticky. If your dates are firm, soak them in warm water for 10 minutes and pat dry before using.
The nuts should be roasted and unsalted; if you have raw nuts, toast them in a dry skillet over medium heat for 3-5 minutes until fragrant.
When shaping the log, keep your hands slightly moistened with water to prevent sticking. If the mixture becomes too sticky, chill it for 10-15 minutes before shaping.
For clean slices, use a sharp chef's knife and wipe the blade with a damp cloth between cuts.
Variations
- Chocolate Date Roll: Add 1/4 cup of unsweetened cocoa powder to the date paste along with the nuts, or fold in 1/2 cup of dark chocolate chips. The chocolate adds a rich flavor that pairs well with the dates and nuts.
- Spiced Energy Roll: Stir 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger, and a pinch of nutmeg into the date paste before adding the nuts. The warm spices complement the sweetness of the dates.
- Citrus Zest Roll: Add the zest of one orange or lemon to the date paste when warming. The bright citrus aroma and flavor cut through the sweetness and add a refreshing note.
- Cranberry Pistachio Roll: Replace the walnuts with 1/2 cup of dried cranberries. The tart cranberries balance the sweetness of the dates and add a chewy texture, creating a festive look.

Serving ideas
Serve the energy roll slices as a snack, dessert, or lunchbox treat. They are perfect for parties, picnics, or a quick bite.
The slices can be arranged on a platter and garnished with extra pistachios or a drizzle of honey, though the video does not show these additions.
For a more elegant presentation, place the slices on a serving board with fresh fruit, cheese, or crackers. They also pair well with coffee or tea. The energy roll is best enjoyed at room temperature, so let it sit out for a few minutes after chilling if desired.

No-Bake Medjool Date and Nut Energy Roll

Ingredients
- 2 cups pitted Medjool dates
- 2 tbsp unsalted butter
- 1/2 cup roasted pistachios
- 1/2 cup walnuts
- 1/2 cup toasted almonds
- 1/2 cup toasted white sesame seeds
- 1/2 cup shredded coconut
Instructions
- In a nonstick skillet over medium heat, add the pitted Medjool dates and unsalted butter. Warm them, stirring frequently with a spatula, until the dates soften and begin to break down. Continue mashing them into a thick, glossy paste. This should take about 5 minutes.
- Remove the skillet from the heat. Add the roasted pistachios, walnuts, and toasted almonds to the date paste. Use the spatula to fold everything together until the nuts are evenly distributed throughout the sticky date mixture.
- Transfer the date-nut mixture onto a large sheet of parchment paper. Using your hands (lightly moistened to prevent sticking), shape it into a tight, compact cylinder, about 2 inches in diameter. Roll it back and forth to smooth the surface and ensure it holds together.
- Spread the toasted white sesame seeds and shredded coconut on a plate or in a shallow dish. Roll the date-nut log in the mixture, pressing gently so the seeds and coconut adhere to all sides. Continue until the entire surface is fully encrusted.
- Wrap the coated log tightly in the parchment paper and place it in the refrigerator. Let it chill for at least 30 minutes, or until firm enough to slice cleanly.
- Remove the chilled log from the refrigerator and unwrap it. Using a sharp chef's knife, slice the log into thick round medallions, about 1/2 inch thick. Arrange on a serving plate and serve at room temperature or slightly chilled.
