Tips for success

For the cleanest slices, use a serrated knife and a gentle sawing motion. If the log softens while slicing, return it to the fridge for a few minutes.

You can also chill the sliced medallions briefly before serving to help them hold their shape. These rolls are best served at room temperature, where the date interior becomes slightly chewy and the coating stays crisp.

To make ahead, prepare the log through step 3 and keep it wrapped in the refrigerator for up to 1 week. Coat and slice just before serving.

For a festive presentation, arrange the medallions on a platter and dust with a little extra ground cardamom. These rolls also make excellent edible gifts—wrap the coated log in parchment and tie with twine.

Variations

  • Chocolate Date Rolls: Add 1/4 cup unsweetened cocoa powder to the warm date mixture along with the nuts. For an extra treat, roll the chilled log in cocoa powder mixed with a little confectioners' sugar instead of sesame and coconut.
  • Orange Blossom Date Rolls: Add 1 teaspoon orange blossom water and 1 teaspoon finely grated orange zest to the date mixture. Use almonds instead of walnuts and roll in finely chopped pistachios for a fragrant, floral twist.
  • Spiced Date Rolls: Replace cardamom with 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, and a pinch of ground cloves. Roll the log in a mixture of toasted sesame seeds and ground cinnamon for a warming spice profile.
  • Coconut Macaroon Rolls: Increase the shredded coconut to 1/2 cup and add 1/4 cup almond flour to the date mixture. Roll the chilled log in additional shredded coconut for a chewy, macaroon-like coating.

Store the date nut rolls in an airtight container in the refrigerator for up to 2 weeks. They can also be kept at room temperature for up to 3 days in a cool, dry place. If stacking, place a piece of parchment paper between layers to prevent sticking.

You can prepare the entire recipe up to 3 days ahead. Shape and chill the log, then coat and slice just before serving. The coated log can also be stored in the refrigerator for up to 1 week. For longer storage, freeze the uncoated log for up to 3 months.

Serving ideas

Arrange the date nut medallions on a serving platter, slightly overlapping, to showcase their beautiful cross-sections.

They are perfect for dessert buffets, holiday cookie trays, or alongside a cup of strong coffee or tea. The rolls are also lovely when served with a dollop of Greek yogurt or a scoop of vanilla ice cream.

For a more formal presentation, place each medallion in a mini paper cup. You can also sprinkle a few extra chopped pistachios on top for color.

These rolls are naturally sweet and satisfying on their own, making them a great choice for parties or gifting.

Frequently asked questions

Can these date nut rolls be made without butter?
Yes, substitute an equal amount of coconut oil or a vegan butter. The dates will still soften and become sticky, and the rolls will hold together well. Choose a refined coconut oil to avoid a strong coconut flavor, or use a neutral oil like avocado oil.
Why does the date mixture stick to the knife when slicing?
If the log is not chilled enough, the sticky date paste will cling to the blade. Make sure the log is thoroughly chilled for at least 1 hour, and wipe the knife with a damp cloth between cuts. You can also dip the knife in hot water and dry it quickly before slicing.
Can this recipe be made gluten-free?
Yes, all the ingredients are naturally gluten-free. Just ensure that the sesame seeds and shredded coconut are certified gluten-free if you have celiac disease. The recipe contains no wheat, barley, or rye, so it is safe for a gluten-free diet.
How long do these date nut rolls keep?
Stored in an airtight container in the refrigerator, they stay fresh for up to 2 weeks. At room temperature, they will keep for about 3 days. For longer storage, freeze the uncoated log for up to 3 months and coat after thawing.
Can the nuts be substituted with seeds for a nut-free version?
Yes, replace the pistachios and walnuts with roasted sunflower seeds or pumpkin seeds. For the coating, use additional sesame seeds and coconut. The texture will be slightly different but still delicious. Note that sesame seeds are an allergen and should be omitted if needed.

Sliced no-bake cardamom date nut rolls showing pistachio and walnut pieces in dark date caramel.

Ingredients

  • 2 cups Medjool dates, pitted and chopped
  • 2 tbsp butter
  • 1/2 cup shelled pistachios, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup toasted sesame seeds, plus extra for coating
  • 1/4 cup shredded coconut, plus extra for coating
  • 1/2 tsp ground cardamom

Instructions

  1. In a large skillet over medium-low heat, melt the butter. Add the chopped Medjool dates and cook, stirring frequently with a spatula, until the dates soften and become glossy, about 3 to 4 minutes. Use the spatula to mash the dates into a smooth, sticky paste. Remove from heat.
  2. Add the chopped pistachios, walnuts, toasted sesame seeds, shredded coconut, and ground cardamom to the warm date paste. Fold with a spatula until all the nuts and seeds are evenly distributed throughout the date mixture.
  3. Transfer the date-nut mixture onto a large piece of plastic wrap. Using the wrap, shape it into a firm log about 2 inches in diameter. Wrap tightly and refrigerate for at least 1 hour, or until completely firm and chilled.
  4. Spread additional toasted sesame seeds and shredded coconut on a plate. Unwrap the chilled log and roll it in the sesame-coconut mixture, pressing gently so the coating adheres evenly all around.
  5. Place the coated log on a cutting board. Using a sharp chef's knife, slice the log into thick medallions, about 1/2-inch thick. Arrange on a platter and serve.
