Before you start

Before starting, measure out all ingredients. Pit and chop the Medjool dates into small pieces. Roughly chop the pistachios and walnuts. Toast the sesame seeds in a dry skillet over medium heat for 2 to 3 minutes, shaking often, until golden and fragrant.

Set aside a few tablespoons of the toasted sesame seeds and shredded coconut for the final coating. Have a large piece of plastic wrap ready for shaping the log.

Ingredients at a glance (7)
  • 2 cups Medjool dates, pitted and chopped
  • 2 tbsp butter
  • 1/2 cup shelled pistachios, roughly chopped
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup toasted sesame seeds, plus extra for coating
  • 1/4 cup shredded coconut, plus extra for coating
  • 1/2 tsp ground cardamom

Instructions

Warm and Fold

  1. Make the Date-Nut Base
In a large skillet over medium-low heat, melt the butter. Add the chopped Medjool dates and cook, stirring frequently with a spatula, until the dates soften and become glossy, about 3 to 4 minutes. Use the spatula to mash the dates into a smooth, sticky paste. Remove from heat.
Look for Dates are glossy, soft, and easily mashed into a paste.
Tip Keep the heat low to avoid scorching the dates; they should melt gently.
  2. Fold in Nuts and Spices
Add the chopped pistachios, walnuts, toasted sesame seeds, shredded coconut, and ground cardamom to the warm date paste. Fold with a spatula until all the nuts and seeds are evenly distributed throughout the date mixture.
Look for The mixture is cohesive and studded with crunchy nuts and seeds.
Tip Work quickly while the dates are still warm for easier mixing.

The dates should be glossy, soft, and easily mashed into a sticky paste. The nuts and seeds should be evenly distributed throughout the warm date mixture. The mixture should be cohesive and slightly tacky, but not overly sticky. Smell the warm cardamom and toasted nuts—it should be fragrant and inviting.

Shape and Chill

  1. Shape and Chill the Log
Transfer the date-nut mixture onto a large piece of plastic wrap. Using the wrap, shape it into a firm log about 2 inches in diameter. Wrap tightly and refrigerate for at least 1 hour, or until completely firm and chilled.
Look for The log is firm enough to hold its shape when sliced.
Tip Chilling thoroughly makes the log easier to coat and slice cleanly.

The log should be firmly shaped, about 2 inches in diameter, and wrapped tightly in plastic wrap. After chilling, it should be firm enough to hold its shape when gently pressed. The surface should be smooth, and the log should feel solid and cold to the touch.

Coat and Slice

  1. Coat the Chilled Log
Spread additional toasted sesame seeds and shredded coconut on a plate. Unwrap the chilled log and roll it in the sesame-coconut mixture, pressing gently so the coating adheres evenly all around.
Look for The log is evenly coated with a textured white outer layer.
Tip Use your hands to press the coating onto any bare spots.
  2. Slice and Serve
Place the coated log on a cutting board. Using a sharp chef's knife, slice the log into thick medallions, about 1/2-inch thick. Arrange on a platter and serve.
Look for Each slice reveals a beautiful cross-section of emerald pistachios and walnuts in dark amber date caramel.
Tip For clean slices, wipe the knife between cuts.

The log should be evenly coated with toasted sesame seeds and shredded coconut, with no bare spots.

When sliced, each medallion should hold together without crumbling, and the cross-section should show vibrant green pistachios and walnuts against the dark amber date paste. The slices should be thick and uniform.

Common mistakes

Overheating the dates can cause them to burn or become too hard; keep the heat low and stir frequently. If the mixture is too sticky to shape, refrigerate it for 10 minutes before forming the log.

When slicing, use a very sharp knife and wipe the blade between cuts to prevent sticking. If the coating doesn't adhere, press it on with your hands.

How to tell it’s done

The dates are ready when they are glossy, soft, and easily mashed into a smooth paste. The log is ready to slice after chilling for at least 1 hour; it should be firm to the touch and hold its shape when sliced.

The final rolls should be thick medallions with a clean cut and a visible mosaic of nuts and seeds.
