Tips for success

For the most melty chocolate, use chocolate chips or a chopped bar with a higher cocoa content. They hold their shape better during baking and create distinct pools.

If you prefer a more uniform crumb, chop the chocolate into small pieces and toss them with a tablespoon of flour before folding in—this prevents them from sinking.

To get clean slices, use a serrated knife and saw gently, especially if the bread is still warm.

For the best texture, let the loaf cool completely before slicing, then reheat individual slices in the microwave for 10 seconds. This revives the molten chocolate without drying out the bread.

Variations

  • Nutty Banana Bread: Fold in 1/2 cup of toasted walnuts or pecans along with the chocolate chips. The nuts add a crunchy contrast to the tender crumb and melty chocolate.
  • Peanut Butter Swirl: After transferring the batter to the pan, dollop 1/4 cup of creamy peanut butter on top and use a knife to swirl it through. This adds a rich, salty note.
  • Mocha Twist: Dissolve 1 tablespoon of instant espresso powder in the melted butter before adding it to the bananas. The coffee enhances the chocolate flavor without overpowering the banana.
  • Double Chocolate: Replace 1/4 cup of the flour with 1/4 cup of unsweetened cocoa powder. The bread will have a deeper chocolate flavor, and the chips will stand out even more.

Storage and make-ahead

Fridge
Refrigerate in an airtight container for up to 5 days. Bring to room temperature or reheat before serving to restore the soft texture.
Freezer
Wrap the cooled loaf tightly in plastic wrap and foil, then freeze for up to 3 months. Thaw overnight in the fridge and reheat slices in the microwave or oven.
Reheat
Reheat individual slices in the microwave for 10-15 seconds, or in a 350°F (175°C) oven for 5-10 minutes until warm and chocolate is melty again.

Store the banana bread in an airtight container at room temperature for up to 3 days. To keep it moist, place a piece of bread or a damp paper towel in the container.

If the chocolate pools solidify, that's fine—reheating in the microwave will bring back the melty texture.

You can make the batter up to 2 days ahead and keep it refrigerated in a covered bowl.

When ready to bake, let it come to room temperature for 30 minutes, then pour into the pan and bake as directed. The baked loaf can also be frozen for up to 3 months.

Serving ideas

Serve this banana bread warm for the full molten chocolate effect. Pair it with a scoop of vanilla ice cream or a drizzle of caramel sauce for dessert. For breakfast, a slice alongside a cup of coffee or tea is perfect.

If you're serving it for a crowd, slice it thick and arrange on a platter. The contrast of the dark chocolate against the golden crumb is beautiful. You can also dust with powdered sugar just before serving, though it's delicious without.

Frequently asked questions

Can this banana bread be made without eggs?
Yes, you can substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water). Let it sit for 5 minutes before adding. The texture will be slightly denser but still moist.
Why does the bread sink in the middle?
A sunken center usually means the bread was underbaked or the oven temperature was too low. Make sure the oven is preheated to 350°F (175°C) and bake until a skewer comes out with moist crumbs, not wet batter.
Can this recipe be doubled?
Yes, you can double all ingredients and bake in two loaf pans. The baking time may increase by 5-10 minutes. Check for doneness with a skewer.
How should the bananas be prepared?
Use very ripe bananas with brown spots. Mash them with a fork until mostly smooth but with a few small chunks. The chunks will melt into the bread, adding pockets of banana flavor.
Can you use frozen bananas?
Yes, thaw frozen bananas at room temperature and drain any excess liquid before mashing. The bread will be just as moist, though the texture may be slightly more dense.

Molten Chocolate Banana Bread with Vanilla Bean

Warm slice of banana bread with melty chocolate pools on a wooden board

Ingredients

  • 3 large ripe spotted bananas (about 330g)
  • 8 tbsp unsalted butter, melted (113g)
  • 1 large egg
  • 1/2 cup packed brown sugar
  • 1/3 cup granulated sugar
  • 1 tbsp vanilla bean paste
  • 1/3 cup sour cream (80g)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 1 pinch of salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper. In a large bowl, mash the ripe bananas with a fork until mostly smooth with some small chunks. Add the melted butter, egg, brown sugar, granulated sugar, and vanilla bean paste. Stir until well combined.
  2. Stir in the sour cream until smooth. The batter will look creamy and slightly thick.
  3. Sprinkle the flour, baking soda, and salt over the wet mixture. Use a rubber spatula to fold everything together until just incorporated. Do not overmix; a few streaks of flour are fine.
  4. Gently fold in the chocolate chips, reserving a few to sprinkle on top if desired. The chips will create melty pools throughout the bread.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Tap the pan gently on the counter to release any air bubbles.
  6. Bake at 350°F (175°C) for 55 minutes, or until the top is deeply caramelized and a skewer inserted into the center comes out with moist crumbs (not raw batter). The internal temperature of the loaf should reach 200°F (93°C) for a fully baked crumb.
  7. Let the bread cool in the pan for 10 minutes. Then use the parchment to lift it out and transfer to a wire rack to cool completely.
  8. Slice the bread while still warm to show off the melty chocolate pools. Serve immediately, or let it cool completely for a more set texture.
