This banana bread is the one you'll make again and again—it's impossibly moist, deeply caramelized, and packed with pockets of melted chocolate that turn every slice into a treat.
The secret? A generous amount of vanilla bean paste and a touch of sour cream, which keep the crumb tender and rich. It's a simple one-bowl recipe that delivers bakery-level results.
There's banana bread, and then there's this. It starts with three very ripe bananas, mashed until soft, then gets a boost from melted butter, brown sugar, and vanilla bean paste.
The batter comes together in minutes, and the oven does the rest, turning it into a tall, golden loaf with a caramelized top and a center that's almost fudgy. The chocolate chips melt into glossy pools, making every slice a little different—some bites are pure banana, others are pure chocolate.
Ingredients
- 3 large ripe spotted bananas (about 330g)
- 8 tbsp unsalted butter, melted (113g)
- 1 large egg
- 1/2 cup packed brown sugar
- 1/3 cup granulated sugar
- 1 tbsp vanilla bean paste
- 1/3 cup sour cream (80g)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda
- 1 pinch of salt
- 1 cup semisweet chocolate chips
Why this recipe works
The method here is all about maximizing moisture and flavor. Mashing the bananas with a fork leaves a few small chunks, which break down during baking and create pockets of intense banana flavor.
The sour cream adds a subtle tang and extra moisture, while the combination of brown sugar and granulated sugar gives a deep caramelized sweetness.
The high ratio of wet ingredients to flour keeps the crumb tender and almost pudding-like. Baking at 350°F (175°C) for 55 minutes allows the sugars to caramelize slowly, forming a crackly top and a moist interior.
The chocolate chips are folded in at the end, so they stay intact and melt into pools rather than dissolving into the batter.
Notes and substitutions
Use bananas that are heavily spotted—they're sweeter and more aromatic. The riper, the better. If your bananas aren't quite there, you can speed up the process by placing them in a warm oven for a few minutes (not the one you're baking in).
Vanilla bean paste gives the bread a deep, floral vanilla flavor with visible specks. If you don't have it, you can substitute with vanilla extract, but the paste is worth seeking out. Sour cream can be swapped for full-fat Greek yogurt, but avoid low-fat versions, which can make the bread drier.
- vanilla bean paste: 1 tablespoon vanilla extract plus the seeds from 1 vanilla bean
- sour cream: plain Greek yogurt (full-fat) for a similar tang and moisture
- unsalted butter: salted butter, but reduce the added salt to a pinch
- semisweet chocolate chips: dark chocolate chunks or a chopped chocolate bar
