Tips for success
For the best texture, whip the eggs and sugar until pale and tripled in volume—this adds air and helps the cake rise. Use room-temperature eggs for better emulsification.
When adding the dry ingredients, fold gently to avoid deflating the batter, but ensure there are no lumps. The batter should be smooth and glossy before pouring into the dish.
To achieve a perfectly even soak, pour the hot sauce over the cake in a zigzag pattern, covering the entire surface. Use a spatula to spread any sauce that pools on top, helping it seep into the holes.
Let the cake rest for at least 10 minutes before serving, but it can also be served warm or chilled. The longer it sits, the more the flavors meld.
Variations
- Mocha Twist: Add 1 tablespoon of instant espresso powder to the cake batter and the fudge sauce for a subtle coffee flavor that enhances the chocolate.
- Spiced Chocolate: Incorporate 1 teaspoon of ground cinnamon and a pinch of cayenne pepper into the dry ingredients for a warm, spicy kick.
- Nutty Crunch: Replace the chocolate pearls with chopped toasted hazelnuts or almonds for a different texture and nutty flavor.
- Orange Zest: Add the zest of one orange to the cake batter and a splash of orange liqueur to the fudge sauce for a bright, citrusy note.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days. Bring to room temperature or warm before serving.
- Freezer
- Freeze the unsoaked cake for up to 3 months. Thaw overnight, then prepare the sauce and soak as directed.
- Reheat
- Reheat individual slices in the microwave for 15-20 seconds, or warm the whole cake in a 300°F oven for 10 minutes.
Store leftover cake in an airtight container at room temperature for up to 3 days. The cake remains moist and fudgy, and the flavors deepen over time.
If stored in the refrigerator, bring to room temperature before serving for the best texture. The sauce may thicken when chilled, but the cake will still be delicious.
This cake can be made a day ahead. Prepare and soak the cake as directed, but do not add the chocolate pearls until just before serving to maintain their crunch.
Cover and refrigerate overnight. Before serving, let the cake come to room temperature or warm gently in the microwave. The moisture will be even more pronounced the next day.
Serving ideas
Serve the cake warm or at room temperature, cut into generous squares. The fudgy texture pairs beautifully with a scoop of vanilla ice cream or a dollop of whipped cream, which balances the richness. For a special touch, drizzle with extra chocolate sauce or dust with powdered sugar.
This cake is ideal for parties and gatherings, as it can be made ahead and serves a crowd. The dramatic appearance—dark, glossy, and studded with crispy pearls—makes it a showstopper on any dessert table. Encourage guests to use a spatula to lift their slice, showing off the beautifully soaked interior.

Moistest Turkish Wet Chocolate Cake with Hot Fudge Sauce

Ingredients
- 4 large eggs
- 1 cup granulated sugar
- 1 cup whole milk
- 1 cup vegetable oil
- 3 tbsp dark cocoa powder
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 2 cups whole milk
- 1/2 cup granulated sugar
- 3 tbsp dark cocoa powder
- 2 tbsp unsalted butter
- 1/2 cup crispy chocolate pearls
Instructions
- Preheat the oven to 350°F (175°C). In a large bowl, whip the eggs with the sugar until pale and thick. Whisk in the milk, oil, and cocoa powder until smooth. Add the flour and baking powder, and whisk until the batter is silky and free of lumps.
- Pour the batter into a buttered glass baking dish. Bake at 350°F (175°C) for 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven and let cool for 5 minutes.
- While the cake is still warm, use a wooden skewer to poke dozens of deep holes across the entire surface. These holes allow the fudge sauce to soak deep into the sponge.
- In a saucepan, combine the milk, sugar, cocoa powder, and butter. Bring to a simmer over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens slightly, about 5 minutes.
- Pour the steaming hot fudge sauce evenly over the warm cake, making sure to fill every hole. Let the cake absorb the sauce for at least 10 minutes, until the top looks glossy and wet.
- Sprinkle the crispy chocolate pearls generously over the top. Cut into squares and lift out with a spatula, showing the deeply soaked sponge. Serve warm or at room temperature.
