Tips for success
For the best texture, use a cookie scoop to ensure uniform balls. This helps them bake evenly and soak consistently.
If you don't have a scoop, use a tablespoon and roll the dough between your palms. The size of the balls affects the baking time, so adjust accordingly.
When drizzling the chocolate, use a fork to create thin lines for a professional look. You can also dip the tops directly into the melted chocolate for a thicker coating.
If the chocolate hardens, reheat it gently in the microwave. Store the cookies in an airtight container to keep them soft.
Variations
- Mint Chocolate: Add 1/2 teaspoon peppermint extract to the cookie dough and use a mint-infused syrup by steeping a few mint leaves in the warm milk. Drizzle with dark chocolate and sprinkle with crushed peppermint candies.
- Orange Mocha: Stir 1 teaspoon orange zest into the cookie dough and add a splash of orange juice to the syrup. Finish with a drizzle of dark chocolate and a pinch of sea salt for a citrusy twist.
- Spiced: Add 1/2 teaspoon ground cinnamon and 1/4 teaspoon nutmeg to the dry ingredients. Use a syrup infused with a cinnamon stick and a star anise. Drizzle with chocolate and sprinkle with a little cinnamon sugar.
- Nutty: Fold 1/2 cup chopped toasted walnuts or hazelnuts into the dough. Use a syrup with a drop of almond extract. Drizzle with chocolate and top with chopped nuts for extra crunch.
Storage and make-ahead

Store the cookies in an airtight container in the refrigerator for up to 5 days. They can also be kept at room temperature for up to 2 days, but the chocolate may soften.
To maintain the fudgy texture, keep them chilled and bring to room temperature before serving if desired.
The coffee syrup can be made up to 3 days ahead and stored in the refrigerator. The cookie dough can be prepared and shaped, then refrigerated for up to 24 hours before baking. After baking and soaking, the cookies can be kept in the refrigerator for up to 5 days.
Serving ideas
Serve these cookies as a dessert with a glass of cold milk or a cup of hot coffee. They are also wonderful with a scoop of vanilla ice cream.
The contrast of the warm cookie (if reheated) and cold ice cream is delightful. For a special occasion, dust with confectioners' sugar or add a sprinkle of sea salt.
These cookies are best enjoyed within a few days of making. They are perfect for parties, potlucks, or as a sweet treat for the family. The chocolate drizzle makes them look elegant, so they're great for gifting. Store them in a decorative box or tin.

Mocha Soaking Syrup Brownie Cookies

Ingredients
- 2 cups cold milk
- 100 g sugar
- 1 tsp instant coffee
- 125 g softened butter
- 100 ml vegetable oil
- 100 g sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking powder
- 3 tbsp dark cocoa powder
- 3 cups all-purpose flour
- 1/2 cup dark chocolate, melted
Instructions
- In a saucepan, combine the cold milk, sugar, and instant coffee. Whisk over medium heat until the sugar and coffee are completely dissolved. Do not boil. Remove from heat and let cool to room temperature, then transfer to the refrigerator to chill while preparing the cookie dough.
- In a large bowl, cream together the softened butter, oil, and sugar until light and fluffy. Beat in the egg and vanilla extract. In a separate bowl, whisk the baking powder, dark cocoa powder, and all-purpose flour. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
- Preheat the oven to 340°F (170°C). Roll the dough into 25 walnut-sized balls and place them on a baking sheet lined with parchment paper, spacing them a few inches apart. Bake for 20 minutes, until the tops are cracked and the cookies are set around the edges but still soft in the center.
- Remove the hot cookies from the oven and immediately dunk each one into the chilled coffee syrup for 3 seconds. Let the excess syrup drip off, then place the soaked cookies on a platter or wire rack to rest.
- Once all cookies are soaked, drizzle the melted dark chocolate over the tops. Place the cookies in the refrigerator and chill for 1 hour, allowing the chocolate to set and the flavors to meld.
