Tips for success
For the best cheese stretch, use a cheese that melts well, like kaşar, mozzarella, or provolone. Shred the cheese yourself rather than buying pre-shredded, which often contains anti-caking agents that can hinder melting.
Let the pides cool for a minute or two after baking before cutting—this allows the cheese to set slightly, so it doesn't all ooze out, but it still stretches beautifully. Serve them warm, as the cheese will firm up as they cool.
If you have leftover garlic butter, brush it on the crust after baking for an extra hit of flavor. You can also add a sprinkle of fresh parsley or oregano after baking for a burst of color.
For a spicier version, add more red pepper flakes or a drizzle of chili oil. These pides are best enjoyed fresh, but if you have leftovers, reheat them in a hot oven for a few minutes to restore crispness.
Variations
- Spinach and Feta: Replace the mushrooms with 1 cup of chopped spinach (squeezed dry) and 1/2 cup of crumbled feta cheese. Omit the red pepper flakes or keep them for a little heat. Bake as directed.
- Spicy Sucuk: Add 1/2 cup of sliced sucuk (Turkish sausage) or pepperoni along with the mushrooms. The spicy, smoky flavor pairs beautifully with the garlic butter and cheese.
- Tomato and Olive: Add 1/2 cup of chopped cherry tomatoes and 1/4 cup of sliced black olives to the topping. The juicy tomatoes create a nice contrast to the rich cheese.
- Herb and Cheese: Mix 1 tablespoon of chopped fresh oregano or thyme into the garlic butter. Sprinkle extra herbs on top before baking for a fragrant, garden-fresh flavor.

Store leftover pides in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes, or until the cheese is melted and the crust is crisp again. Avoid microwaving, as it will make the crust soggy.
The dough can be prepared up to 1 day ahead. After kneading, place it in a lightly oiled bowl, cover, and refrigerate. The next day, let it come to room temperature and proceed with shaping. The garlic butter can also be made ahead and stored in the refrigerator for up to 1 week. Assemble the pides just before baking.
Serving ideas
Serve these mini pides warm, straight from the oven, when the cheese is at its stretchiest. They make an excellent appetizer for parties, game day spreads, or a casual dinner.
Pair them with a simple green salad or a bowl of soup for a light meal. They are also great alongside grilled meats or as part of a mezze spread.
For a fun presentation, arrange the pides on a large platter with extra red pepper flakes and fresh parsley on the side. Let guests pull them apart and watch the cheese stretch.
These pides are best enjoyed with your hands, so provide plenty of napkins. They are a crowd-pleaser that disappears quickly, so consider making a double batch.

Mini Garlic Mushroom Turkish Pide with Stretchy Cheese

Ingredients
- 1 cup warm milk
- 1 tsp active dry yeast
- 1 tsp salt
- 2 tbsp olive oil
- 2 1/2 cups all-purpose flour
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 250 g kaşar cheese, shredded
- 200 g button mushrooms, sliced
- 1 tsp red pepper flakes
Instructions
- In a large bowl, combine the warm milk and yeast. Let it sit for 5 minutes until frothy. Add salt, olive oil, and flour. Stir with a wooden spoon until a shaggy dough forms, then turn it out onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic. Shape into a ball, place in a lightly oiled bowl, cover with a towel, and let rise in a warm spot until doubled, about 1 hour.
- While the dough rises, make the garlic butter: In a small bowl, mix the melted butter, minced garlic, and chopped parsley. Set aside at room temperature.
- Punch down the risen dough and divide it into 4 equal pieces. On a lightly floured surface, roll each piece into an oval about 8 inches long and 5 inches wide. Transfer the ovals to a baking sheet lined with parchment paper. Use your fingers to create a slight rim around the edges, forming a boat shape.
- Brush each dough boat generously with the garlic butter, including the edges. Sprinkle the shredded kaşar cheese evenly over the center, leaving a small border. Top with sliced mushrooms and a sprinkle of red pepper flakes.
- Preheat the oven to 410°F (210°C). Bake the pides for 18 minutes, or until the crust is golden brown and blistered and the cheese is melted and bubbling. The edges should be crisp and the cheese should be fully melted.
- Remove the pides from the oven and let them cool for 2-3 minutes. Slice diagonally and serve warm. The cheese should stretch in long, gooey strands when pulled apart.
